Preparing caviar oil begins with preparing the ingredients. The amount of products depends on how much herring caviar you have, as well as on your taste preferences, because some people want more caviar in such an appetizer, while for others it will be too salty.
For caviar from 2 large herrings, I take 150 g of butter and 1 processed cheese. The butter should be soft; remove it from the refrigerator in advance. We need the cheese for the elasticity of the caviar spread. I also add half a teaspoon of lemon pepper to the dish. This mixture of white or black pepper with lemon zest is sold in supermarkets. Lemon pepper simply cannot be replaced in preparing fish dishes.
Using a blender, prepare the butter-cheese mixture. Add a tablespoon of freshly squeezed lemon juice to it.
Now mix the herring caviar with the butter and cheese mixture and thoroughly mash everything with a fork. You can also do this with a blender, but then many of the eggs are destroyed, which slightly spoils the wonderful taste of this snack.

Why this name? Because Leonid Ilyich loved herring butter with eggs and garlic. Following Brezhnev's example, they began to serve this version of the snack on the tables.
What does it contain?
- Herring 1 piece;
- Butter 200 gr;
- Boiled egg 1-2 pcs;
- Clove of garlic;
- Chopped greens;
- Onion (preferably red) – small head;
- A little black pepper.
How to make herring oil?
- We cut the fish: remove the head, spine and all bones.
- Meanwhile, defrost the butter at room temperature.
- Boil hard-boiled eggs.
- Using a blender, beat eggs with butter. If you don't have a blender, you can mash everything with a fork.
- We cut the herring and pass it through a meat grinder. If desired, you can grind it in a blender.
- Chop the onion very finely and pour boiling water over it to remove the bitterness.
- Add garlic squeezed through a garlic press and chopped herbs to the egg-oil mixture. Mix everything.
- Mix herring, onion and pepper into the resulting mixture.
- Place in the refrigerator for 2 hours.
The resulting butter can be shaped into a sausage shape and wrapped in cling film. This will make cutting easier.

What ingredients will be needed?
It is necessary to prepare the following products:
- large herring - 1 fish;
- onion - head;
- butter – 230 g;
- garlic – 2 cloves;
- greens - to taste;
- pepper – 5 g;
- egg – 3 pcs.
Step-by-step cooking process
Cooking process:
- First, you need to cut off the head of the fish and remove the fins. Get rid of bones, ridge.
- The carcass should be washed under running water and chopped.
- The butter needs to be defrosted and the eggs boiled.
- Then small pieces of fillet must be ground through a meat grinder or added to the rest of the ingredients in a blender.
- Next, the eggs, cut in half, are placed in a food processor container. Oil is also placed here. Whisk everything until the paste becomes homogeneous.
- The onion is peeled and cut into small cubes. They are poured with boiling water to remove the bitterness. It is better to use red sweet onions.
- Then sliced onions, chopped herbs, garlic, passed through a press, are placed in the herring-butter mixture. It is peppered and ground again using a blender.
- The snack is placed in a rectangular container. Place the paste in the cold for 3 hours. You can also wrap the mincemeat in film or foil, rolling it like a cylinder. This paste is served with tea in the morning. It is spread on toast or bread.
Herring oil with carrots.
Adding carrots to the appetizer gives it an orange color, which makes it look like caviar. It is this type of herring oil that is commonly called “herring caviar”.
Products:
- 1 large fatty herring, or 2-3 small ones;
- 2-3 small carrots;
- Oil 1 pack.
Preparation method:
- Chop the carrots. You can use either a fine grater or a blender. The main thing is not big.
- Clean the fish, wash it, remove all bones. Use tweezers to completely remove all bones. Cut the herring into cubes.
- Combine fish and carrots in a blender.
- Stir a stick of melted butter into the resulting mixture. It should be soft, but not liquid. To achieve the desired consistency, leave the pack out of the refrigerator for 2-3 hours.
- Place in the refrigerator. Serve after cooling.
With milk and mustard.
Milk in this recipe is used to soak the herring to give it a delicate taste and make it less salty.

- milk for soaking.
Preparation:
- Peel the herring, remove all bones, cut into cubes and pour in milk until it covers it completely. Leave for 2 hours.

- Add oil and mustard to the chopped herring. Beat again until smooth.
- Leave in the refrigerator until thickened, and then use as intended.

Ingredients:
- Herring fillet - 2 pcs.;
- Cottage cheese - 250 gr;
- Butter - 1 tablespoon;
- Onion - 1 pc.;
- Walnuts - 50-70 gr.
Preparation:
1. For convenience, cut the herring fillet into pieces of your choice. Cut the onion into several slices. Next, place all the ingredients in a blender bowl and blend until smooth. You can add a little ground pepper.
2. Place the resulting pate in a bowl, cover with a lid and put in the refrigerator for half an hour until it hardens a little. And then you can spread it on some bread and enjoy this incomparable snack. When serving, you can sprinkle with any fresh herbs.
