Holiday in a thermos. The best mulled wine recipes for the New Year

It's cold, right? It's time to brew homemade mulled wine: Afisha Daily talks about its simple recipe, and also reveals a number of secrets that will make it really tasty.

The idea of adding spices to wine dates back to Ancient Rome, where with the help of this technique they wanted not only to warm up, but rather to refine the taste of either too sour or too strong wine.
Today, mulled wine is primarily an important addition to the Christmas and New Year holidays; moreover, according to Sergei Chesnokov from the Strelka bar, in winter they add more spices to food and drinks, since spices are natural stimulants that speed up metabolism. In Germany it is called glühwein and is prepared without any special frills: dry red wine, cinnamon, cloves, lemon and sugar. In Scandinavia and Finland, everything is more interesting: it is called gløg, and it is boiled with almond flakes to wash down the traditional rice pudding risgrøt, generously sprinkled with cinnamon, on Christmas Eve. When preparing their vin chaud, the French allow the presence of cognac or fruit brandy in the drink (the best option is from pear), but the Italians cannot imagine their vin brulè without orange and cinnamon. However, in some regions they prefer variations with the addition of lemon zest (in the province of Venice) or cardamom (in the north of the country).

Mulled wine recipe with fruit

There are many known recipes for this wonderful warming drink; the only thing that remains unchanged in all recipes is wine and spices, which, however, can vary greatly, and wine can also be used, either red or white, dry or semi-sweet.

We suggest preparing aromatic homemade mulled wine with fruits, always citrus fruits, but the rest can be optional.

Ingredients for the drink “Mulled wine recipe with fruit”:

  • — dry red wine 1 bottle, 0.75 or 1 liter;
  • - fruits;
  • - spices - a teaspoon or 10-12 buds of cloves, cinnamon, preferably in whole pieces, 1-2 sticks, if the cinnamon is ground then half a teaspoon, allspice 8-10 peas;
  • — additionally, you can use fresh or dried ginger, bay leaf, black pepper, all these spices are taken in small quantities;
  • - honey - 2 tbsp. l.

How to make mulled wine at home:

Pour the wine into a saucepan and heat over low heat. The wine can be dry or semi-dry, not necessarily of excellent quality; on the contrary, it is customary to use inexpensive table wines for mulled wine, because the taste of the wine will be complemented by a bouquet of spices and fruits.

Always use 2 types of citrus fruits, for example, lemon and tangerine or orange or grapefruit, the rest of the fruits are of your choice, it can be an apple, pear, peach or apricot, you should not add only grapes, because grape wine is used, you can also add berries, currants, strawberries, cherries, etc. For a bottle of wine, 1 small fruit or 2 tablespoons of berries is enough.

Remove the zest from the lemon and orange; you can simply cut the peel thinly and add the zest to the wine.

Also add spices to the wine and continue heating without bringing to a boil. It is very important not to boil the wine; it should be heated to 90-95 degrees over low heat so that the spices have time to give all their aroma to the drink.

Squeeze the juice from peeled lemon and orange and add to the wine, heat a little more.

Cut the remaining fruit into slices or small pieces.

Strain the mulled wine, removing the zest and spices, pour it back into the pan, add fruit and put on very low heat so that the drink maintains temperature, add honey or sugar to taste.

Depending on preferences, 2 tablespoons of honey if a non-sweet mulled wine is desired, but the amount of honey can be increased if a sweeter drink is needed. You can replace honey with cane or regular sugar.

Let the drink brew for 10-15 minutes and serve hot. Leave the remaining mulled wine on low heat so that it does not cool down.

Mulled wine literally translated from German means flaming wine. In Western countries such as the Czech Republic, Austria, Switzerland, Finland, and Germany, mulled wine is considered the national drink for the Christmas holidays. The roots of the wine drink go back to the distant Ancient Roman Empire, where warm Cahors was first mixed with various spices. In the Middle Ages, European countries became the birthplace of the first real hot wine. Heated burgundy was mixed with various herbs such as small galangal. Mulled wine has since gained considerable popularity in Western countries.

There is a drink, but no words. The name "Mulled wine" is banned

Sellers of the drink in Moscow are coming up with new creative names for it. The mayor's office explains the recommendation to abandon the name by the Russian national concept of New Year's fairs

The word “mulled wine” has fallen out of favor with the Moscow authorities. Organizers of city New Year's fairs are recommended to call the drink anything but “mulled wine.”

Sellers are practicing creativity so as not to scare off buyers. The mulled wine signs read: “Hot New Year’s drink”, “Christmas drink”, “Hot holiday cocktail”. There is even a “Prague New Year’s drink”. The first part of the word is sealed, and the mysterious “Vein” is obtained.

The mayor's office Business FM explained this conflict with the Russian national concept of fairs. The word can be used, according to the wishes of Muscovites and guests of the capital, there should be more Russian goods, dishes and drinks, Alexey Nemeryuk, head of the Moscow Department of Trade and Services, told Business FM.

Alexey NemeryukHead of the Department of Trade and. It is clear that everyone’s recipe is different. If we are talking about the mulled wine that everyone is used to drinking in Europe, this is a certain recipe that our restaurateurs often do not follow and do not add one or more ingredients to this drink. Therefore, it’s like a kind of Christmas drink, especially since our venues, our festival are associated with Russian folk tales, and the word “mulled wine” doesn’t really fit in here. We don’t call our Christmas Christmas.”

However, fair visitors are confused and, in search of mulled wine, either go for the familiar smell, or do not buy the “Christmas hot drink”, which is completely unknown to them, mistaking it for tea. Business FM producer Daria Gorshkova, who visited several fairs, told her story

Daria Gorshkova, producer, Business FM “On Saturday, I decided to take a walk around several New Year’s fairs. I got off at Pushkinskaya and walked down just three boulevards, so I was at three different fairs. Everything is beautiful, snowy, colorful, bright. I really wanted mulled wine. We walked and walked, and there were quite a lot of tents. “Tea”, “coffee” and “hot New Year’s drink” were written everywhere. And we all thought that a “hot New Year’s drink” was some kind of hot drink, non-alcoholic, something like tea with something. It didn’t even occur to us that it could be mulled wine.”

As for the recipe, there is no single classic recipe for mulled wine. The only exceptions can be those drinks in which, in addition to wine, strong alcohol is added. And, besides, this word has long and firmly entered the Russian language as a concept, - the head of the Union of Sommeliers and Experts of Russia, Artur Sargsyan.

Arthur Sarkisyan, head of the Union of Sommeliers and Experts of Russia “Mulled wine implies a certain recipe, but in each country this can happen in its own way. In Riga they add “Riga” balsam and call it in their own way: warm wine with balsam. You can call it whatever you want, but the essence itself will not change. For now, I don’t see the point in changing anything, saying that this is not mulled wine. Mulled wine will be the most understandable name. I have a negative attitude towards some innovations that people don’t know.”

However, according to the observations of fellow journalists, the concept of Russian fairy tales is also not observed at all fairs. For example, at the Rossiya cinema the New Year’s market is dedicated to the German fairy tale “The Nutcracker”. At the skating rink there are performances based on Hoffmann's fairy tale, and small nutcrackers are also sold as Christmas tree decorations.
