It’s easier to make ice cream at home if you have an ice cream maker in your kitchen arsenal.

Cream

To please yourself with a cool dessert on a hot summer day, we suggest preparing a real ice cream at home in 5 minutes. This recipe does not require constant stirring while it sets, which makes it very easy to prepare.

Ingredients:

  • 550 ml cream 33% and above;
  • 170 g condensed milk;
  • 7 g gelatin.

Recipe:

  1. We prepare gelatin for use as indicated in the manufacturer's instructions.
  2. Pour the cream and condensed milk into the mixer bowl. Beat until smooth for 10 seconds. Next, increase the speed of the mixer and pour in the gelatin in a thin stream.
  3. Continue beating for 2-3 minutes until the mixture becomes soft and fluffy.
  4. Place the ice cream in a plastic container with a lid, level it with a spoon and put it in the freezer for 5-6 hours.
  5. We take out the frozen dessert and enjoy its taste.

To make it more convenient to put ice cream into portioned plates, you can hold the spoon in boiling water for a few seconds. Then the balls will turn out smooth and neat. This dessert can be served with fresh fruit, chocolate chips, nuts or other toppings.

Important! If you use gelatin, which according to the recipe needs to be heated, then cool it before pouring it into the cream.

Ice cream in a briquette

This ice cream made with cream and milk turns out very tasty and creamy. Eggs are not used in its preparation, and due to starch it produces a very delicate and velvety structure, without ice crystals.

Ingredients:

  • 30 g corn starch;
  • 100 g powdered sugar;
  • 250 ml milk;
  • 600 ml cream 30%;
  • 2 waffles;
  • vanilla.

Recipe:

  1. Cut the vanilla pod lengthwise with a knife to collect its seeds. Transfer them to a saucepan along with the pod.
  2. Add starch, powdered sugar and milk to the same saucepan. Whisk until all lumps are separated.
  3. Place the saucepan over high heat and bring to a boil while stirring constantly. When the first bubbles appear, reduce the heat to medium and simmer for another 3 minutes.
  4. At this time, whip the cream to stable peaks. We start at low speeds, gradually increasing speed.
  5. Remove the milk cream from the heat and remove the vanilla pod. Add a small portion of whipped cream and mix.
  6. Place the milk cream into a bowl with whipped cream and carefully combine with a whisk so that the cream does not fall off and the mass becomes homogeneous.
  7. Take a convenient form or container and place the waffle cake on the bottom.
  8. Place future ice cream on top and smooth with a spatula. Cover with the second waffle and press down lightly.
  9. Place the ice cream in the freezer for 12 hours.

We take out the ice cream and cut it into portions. It turns out very dense and incredibly tasty. Can't compare to store bought!

Five homemade ice cream recipes

Creme brulee

Ingredients:

  • cream 35% - 0.5 l;
  • vanillin – 3 g;
  • flour – 2 tbsp. l.;
  • egg yolk – 2 pcs.;
  • boiled condensed milk – 200 g;
  • milk – 150 ml.

The milk is heated over medium heat. Meanwhile, in a separate bowl, mix 4 tbsp. l. cream, flour, vanillin, yolks and condensed milk - everything is ground until smooth. The resulting mixture is combined with heated milk and mixed thoroughly.

Place the mixture on low heat and stir constantly with a whisk: the cream should thicken. When it starts to boil, remove the container from the stove.

The remaining cream is whipped until thick foam, then mixed with the cooled cream. Beat everything thoroughly with a mixer, cover with a lid or film and place in the freezer for several hours.

To ensure that the finished ice cream is loose, stir the mixture every hour until it completely hardens.

Chocolate

Ingredients:

  • cream 35% - 0.5 l;
  • sugar – 200 g;
  • cocoa – 3 tbsp. l.;
  • salt - a pinch;
  • milk – 1 tbsp.;
  • egg yolks – 5 pcs.;
  • dark chocolate – 100 g.

The chocolate is crushed. Mix salt, cocoa, 50 ml of milk and 100 g of sugar in a saucepan - you should get a chocolate paste into which the remaining milk and cream are poured. The mass is placed on low heat and stirred continuously until it boils.

Beat the yolks with sugar until light in color and combine with the milk mixture. To prevent the yolks from curdling, first add a little chocolate-milk mixture to them, and then carefully pour the mixture back.

The resulting product is placed on the fire and boiled for 5-7 minutes over low heat with continuous stirring. You can't let the mixture boil !

Chopped chocolate is added to the hot mixture, everything is actively mixed until the pieces dissolve. Then the workpiece is cooled in a container with cold water and placed in the freezer overnight.

Fruit and berry

Ingredients:

  • blackberries – 150 g;
  • peach – 150 g;
  • sugar – 1 tbsp;
  • cream – 400 ml;
  • milk – 400 ml;
  • egg whites – 6 pcs.

Cooled egg whites are whipped to stiff peaks and combined with sugar during the beating process. Separately, whip the cream until thick, and then mix with the whites at high speed. The speed is reduced and milk is poured in, everything is mixed with a mixer for another 3 minutes.

  • 1 p. dark chocolate;
  • 300 ml cream 33% or higher.

Recipe:

  1. Finely chop the dark chocolate with a knife.
  2. Pour sugar and cocoa into a saucepan. Mix.
  3. Add the yolks and whisk with a whisk.
  4. Pour cold milk into the mixture in portions and mix thoroughly.
  5. Place the saucepan over medium heat, stirring constantly, until thickened. It is important not to boil the mixture, otherwise the ice cream will not work.
  6. Pass the custard mixture through a sieve and cool slightly.
  7. Add chocolate and dissolve it.
  8. Cool the chocolate mixture completely, stirring occasionally to prevent a crust from appearing.
  9. Whip the chilled cream to stiff peaks and carefully combine with the chocolate mixture. Cover with cling film and put in the freezer.
  10. Stir with a whisk every 40 minutes – 4 times in total.

Place the finished ice cream into bowls and enjoy. You can decorate with grated chocolate.

Recipe:

  1. Pour the cream into a deep bowl and beat with a mixer for 1-2 minutes. The mass should be dense and increase in size.
  2. Pour in condensed milk in a thin stream, whisking continuously. Transfer to a container.
  3. Melt milk chocolate in the microwave or in a water bath. Pour the chocolate into a disposable paper cup and distribute it over the entire inner surface. Shake the remaining chocolate back into the bowl. Place in the freezer for 10 minutes.
  4. Fill chocolate cups with ice cream mixture. Insert the sticks. Place in the freezer for at least 4 hours.

Watermelon ice cream

The recipe uses watermelon as a base. But it can be replaced with the juice of any other juicy fruits or berries.

Ingredients:

  • Schweppes - 0.5 tbsp.;
  • Honey - 3 tbsp;
  • Lime - 1 pc.;
  • Watermelon - 300 g.

Preparation:

  1. Pour Schweppes into a glass and whisk with a spoon to release the gas.
  2. Add honey and lime juice to the swebs. If the honey is thick, melt it in a water bath to a liquid consistency and cool.
  3. Mix the ingredients thoroughly.
  4. Wash the watermelon, peel the rind, remove the seeds and grind the pulp with a blender.
  5. Combine the watermelon mixture with the soda and whisk again.
  6. Pour the mixture into molds and place in the freezer to harden.

Mint ice cream with chocolate

You won’t find a tastier delicacy in the world than homemade ice cream, and such an unusual one at that. It’s definitely not comparable to the store-bought version.

Ingredients:

  • 200 ml condensed milk;
  • 15-20 g of fresh mint leaves;
  • 1 p. vanilla sugar;
  • 250 ml cream from 33%;
  • 1 p. dark chocolate for topping.

Recipe:

  1. Wash and dry the mint. Leave a few leaves for decoration. Place the leaves in a blender bowl and blend with condensed milk and vanilla sugar. Pour into a bowl.
  2. Cool the heavy cream and whip until thick.
  3. Carefully combine the cream and mint mixture.
  4. Chop the chocolate with a knife and add it to the ice cream. Mix thoroughly.
  5. Pour the mixture into the mold, smooth the surface with a spatula and put it in the freezer for 8 hours.

Place ice cream in bowls and decorate with chocolate shavings and mint.
