Recipe for dumplings with cottage cheese on water
Simple dumplings are made from the classic dumpling dough of water, flour, butter and salt. The flour must be sifted before mixing the products so that the dough is homogeneous and manageable, like plasticine.
How to make cottage cheese filling? For dumplings, the curd filling is prepared from fatty cottage cheese, the fattier the cottage cheese, the tastier the dumplings, a whole egg is broken into the filling or, instead of 1 chicken egg, two chicken yolks. It is not recommended to add more sugar to the filling so that the cottage cheese does not leak out from the inside during boiling.
When preparing the filling, it is better to choose dry cottage cheese. Slightly damp cottage cheese should be dried by opening the package and leaving it open on the table. Too wet cottage cheese, essentially cheese. It needs to be squeezed out and the whey separated; for this, housewives use gauze or a sieve.
INGREDIENTS for sweet dumplings with cottage cheese
Dough for dumplings with cottage cheese on water
- flour - 3 cups;
- water – 200 ml (1 glass);
- salt – 0.5 tsp;
- vegetable oil – 1-2 tbsp.
Filling for dumplings from cottage cheese with sugar
- cottage cheese – 400 grams;
- egg yolk – 1 pc.;
- sugar – 2 tbsp.

- Knead a delicious dough for dumplings from flour, water, salt and butter; Before kneading the dough, sift the flour and take boiled water at room temperature.
- Vegetable oil in the dough is an ingredient that acts as a plasticizer; with oil, the dough for dumplings becomes pliable, plastic, and it is easy to make dumplings and dumplings from it.
- Sift the flour into a bowl and make a well in the middle with your hands. Pour salt into the resulting depression and gradually pour in water. Knead the dough, add butter at the end of kneading.
- Place the finished dough in cling film and leave on the table for 20 minutes.
- Knead the dough again. In 20 minutes, the flour has completely combined with water, the finished dough has become homogeneous, but it is not yet so plastic, so we leave the dough for another 10-15 minutes under the film.
- Let's prepare the curd filling for the dumplings. Cottage cheese is considered an important component of the filling; the acid content in the fermented milk product and the moisture content of the cottage cheese determine the taste of the finished dumplings with cottage cheese - sweet, sour, or whether the filling will leak out of the dough during cooking.
- To do this, you will need to grind the cottage cheese with sugar and yolk until homogeneous, smooth, preferably without lumps.
- Cut the finished dough for dumplings into several parts, roll one part into a sausage or into a layer, make pieces from the sausage, roll out circles from them, cut circles out of the layer with a glass.
- Place cottage cheese in the middle of the circles and make a dumpling. We make products from the remaining dough and filling and place them on a cutting board dusted with flour.
- Cook dumplings with cottage cheese in a wide saucepan in a large amount of water, dipping one dumpling at a time into boiling water.
- After the water floats to the surface and boils again, cook the cottage cheese dumplings for 3 to 5 minutes, the cooking time depends on the thickness of the dough in the products. The most proven way to determine readiness is to take one dumpling out of the water and taste it. After cooking, remove all the dumplings from the water with a slotted spoon.

How to cook “Dumplings with kefir”
Take a deep bowl and pour kefir into it.
In a separate bowl, beat the egg with a fork.
Combine kefir with egg, add salt and soda, mix everything well.
Pour some of the pre-sifted flour into a deep, dry bowl and make a well in the flour.
Pour the kefir mass into this cavity and begin to mix everything with vetch.
Add flour to the dough in small portions until it becomes thick enough.
Then we transfer the dough to the table, add a little more flour to it and thoroughly knead the dough with our hands until it becomes soft, homogeneous and elastic. The dough should not stick to your hands; if it continues to stick, add a little more flour.
When the dough is ready, tear off a small piece from it and roll it into a thin layer.
Using a cup or glass, cut out small circles from the dough.
Roll out each circle a little more and put any filling on it. We connect the edges of the dough and form a neat dumpling.
Now the dumplings can be boiled for 5 minutes after they float or steamed (15 minutes), the rest should be frozen. Bon appetit!
Easy preparation of delicious dumplings with kefir
Many housewives prepare dough for dumplings using kefir, as it is particularly soft and tender. At the same time, the filling can be completely different: berries, cottage cheese, potatoes, etc.
Kefir dumplings with cottage cheese
For 2 servings you will need
: 1 glass of kefir; 2.5-3 cups flour; 1 egg; a pinch of salt; 1 teaspoon granulated sugar; 1/3 teaspoon of soda.
To make the filling, take
: 250 grams of cottage cheese; 1 egg yolk; 2 tbsp. spoons of granulated sugar; a pinch of salt.
How to cook
:
- Pour kefir into a container, add an egg, granulated sugar, a little salt and soda. Stir thoroughly until smooth and leave the mixture to stand for 5 minutes. Then gradually add flour. It may require from 2.5 to 3 cups, depending on the gluten and variety.
- Cover the dough and let it rest for about 15 minutes. While it is resting, start preparing the filling. Rub the cottage cheese through a sieve. Add the yolk, granulated sugar and a pinch of salt. Stir until smooth.
- For greater ease of use, divide the dough into several parts. Taking one of them, leave the rest under the towel. Form the dough into a sausage and cut it into pieces. Flatten each piece and roll it out a little.
- Make dumplings and place them on a table surface sprinkled with flour. Boil them in salted water. Once they float, cook them for another 3-4 minutes. Kefir dumplings with cottage cheese are ready. Place them on a wide platter to prevent them from sticking together. Serve them with berries, butter or sour cream. Alternatively, you can make a berry sauce and garnish the finished dish with sprigs of fresh mint.

Kefir dumplings with strawberries
For the test:
0.5 liters of kefir; 5.5-6 glasses of flour; 1 egg; 1 tsp soda; 1 tsp salt.
For filling:
700 grams of fresh or frozen strawberries; granulated sugar - to taste.
How to cook
:

- We start preparing the dish by kneading the dough, this is a very tasty kefir dough for dumplings with cottage cheese, the recipe is suitable for freezing, and kefir in dumplings can be easily replaced with thick sour milk.
- Add vegetable oil, salt, and soda to kefir. Add sifted flour, knead the dough, cover with film and leave for 30 minutes.
- To prepare the filling for dumplings, boil the peeled potatoes in water until tender, add salt to the water after boiling.
- Chop green onions into pieces and fry in vegetable oil; The onion pieces should not turn brown; the green color of the onion should remain after frying.
