Classic pancakes with cottage cheese in a frying pan

Let's start with the classic curd filling without additional ingredients, so that it is clear what to start from.

For the filling we need:

  • Cottage cheese – 300 g
  • 1 egg
  • Salt - 1/2 tsp
  • Sugar - 1 tbsp

These ingredients are enough for an average of 10 pancakes.

Preparation:

1. We will fry the spring rolls in a frying pan. There are two reasons for this. Firstly, the egg that will be mixed into the cottage cheese must be baked. Secondly, the fried pancake does not unfold.

And in order to ensure that the finished pancake does not overcook during cooking, there is one simple step - the pancakes in which the filling will be wrapped need to be baked on only one side. That is, pour the dough into the frying pan, wait until the bottom is browned and immediately remove the pancake from the frying pan.

2. To prepare the filling, break an egg into the cottage cheese, add salt, sugar and mix thoroughly.

The egg is needed so that the cottage cheese does not crumble or fall out when bitten. If desired, you can replace the egg with 1 tablespoon of sour cream.

3. Now take the pancake, place it with the baked side up and place a portion of cottage cheese on the edge of the pancake. One tablespoon will be enough.

5. Place the stuffed pancake in a heated frying pan with vegetable oil, seam side down, and fry for 1 minute over low heat.

6. Then we turn them over and cover them with a lid. We wait 2-3 minutes so that the eggs and cottage cheese have time to bake.

Place the finished pancakes on a plate and serve with sour cream.

  • Olive oil - 2 tbsp
  • Flour - 2 cups

1. To prepare the filling, simply mash the cottage cheese with a fork and mix it with regular and vanilla sugar and raisins.

2. Then add sour cream to the bowl and mix again.

3. To prepare the pancake batter, beat the eggs in a deep bowl, mixing them with sugar.

4. Then add olive oil and mix again.

5. Pour warm milk into a bowl. The milk is preheated in the microwave for just one minute. Stir, add soda and mix again.

6. We begin to add flour in portions and mix it into the milk. Achieve a liquid, homogeneous consistency without lumps

7. Bake pancakes in a hot frying pan with vegetable oil on both sides.

8. Now take the pancake and put the curd filling in the middle.

How to cook pancakes with sour cream in the oven

If you like the taste of baked cottage cheese, then you can bake pancakes in the oven. And grease the pancakes with a layer of sour cream so that they do not dry out.

Ingredients:

For pancakes:

  • 1 liter of milk
  • 6 eggs
  • 120 ml vegetable oil
  • 2 cups flour (cup 250 grams)
  • 6 tbsp. spoons of sugar
  • 0.5 teaspoon salt
  • Vanilla sugar

For filling:

  • 500 grams of cottage cheese
  • 2 eggs
  • 2 tbsp. spoons of sugar
  • a pinch of salt

For sour cream filling:

  • 400 grams of sour cream
  • 2-3 tbsp. spoons of sugar
  • 1 packet vanilla sugar

Preparation:

1. Prepare pancakes. Break the eggs into a deep bowl and beat them with sugar.

2. Add vanilla sugar and salt and mix again.

3. Add vegetable oil.

4. And milk.

5. Add flour, thoroughly, and leave the dough for 30 minutes until it rises.

During this time, all the lumps remaining in the dough will disperse and it will be ready for use.

6. Mix the dough again and fry the pancakes on both sides in a heated frying pan with vegetable oil.

7. The pancakes are ready. We make the filling by mixing cottage cheese with eggs, sugar and salt.

8. Place the curd filling on the edge of the pancake and wrap it with a closed tube.

9. Place the wrapped pancakes in a row in a baking dish greased with butter or vegetable oil. And pour them on top with sour cream filling, prepared by mixing sour cream with regular and vanilla sugar.

The sour cream should completely cover the pancakes to protect them from drying out.

10. Place the pancakes in the oven, preheated to 200 degrees for 20 minutes.
