Big pancake family

Pancakes were the first thing I managed to cook as a child. The result did not disappoint, the ingredients for pancakes were always at home... Well, why not cook them? Sweet, with condensed milk, with sugar and cinnamon, with berries from compote, with jam, fresh berries, unsweetened with cheese, so viscous... That's it, I'm lost. It was love at first sight, at first bite. It became mutual - I love pancakes, pancakes love me. Happiness is when there is such mutual understanding...

There is one very bright representative in this “pancake family”. This is where we will start. These are chocolate custard pancakes with chocolate and berries...

I want to dedicate my first recipe in this topic to all chocoholics. What better way to express love and care than to cook something that your loved ones will be absolutely delighted with. These chocolate pancakes have every chance to take the palm from the rest of their brothers called the big pancake family. A delicate delicate pancake, warm chocolate, a couple of berries... And happiness is very close... This dessert is good for children's company. But it is no less beautiful for a romantic setting for two.

The texture of the pancakes is incredibly tender. Essentially, it is a large porous sponge. We all love it when it’s chocolatey – pre-chocolatey, like chocolate squared, or better yet, cubed. These pancakes have it all. And if you don’t regret adding chocolate sprinkles on top of your hot chocolate... That’s it, you’re in chocolate heaven... Treat your friends and children. Well, did I seduce you? Now let's get to work.

We will need:

  • 500 ml kefir
  • 2 eggs
  • 50 gr. Sahara
  • a pinch of salt
  • 270 gr. flour
  • 30 gr. cocoa
  • 1 tsp. baking soda
  • 3 tbsp. l. vegetable oil
  • 200 ml milk

Prepare pancakes as follows:

  1. Mix kefir, soda, sugar, salt and eggs with a whisk. Gradually add flour and cocoa. The dough is thick, like pancakes.
  2. Boil the milk. Constantly stirring the dough, pour in the boiled milk.
  3. Our dough has become more liquid, a little thicker in consistency than regular pancake dough with milk. Add vegetable oil.
  4. That's it, the preparation of future pancakes is ready. The dough should stand for 30 minutes.
  5. Bake in a frying pan, well heated and greased with vegetable oil. Before baking a new pancake, go over the pan with a silicone brush dipped in vegetable oil.

Chocolate pancake rolls

Sweet rolls are simply irresistibly delicious! Especially if the chocolate pancake has curd and banana filling. For good strong rolls you need pancakes with cocoa powder made from a strong, but thin and elastic dough.

To prepare it you will need:

  • 250 ml fat milk;
  • 120 g flour;
  • 80 g cocoa;
  • one egg;
  • 2 tbsp. spoons of brown sugar;
  • 70 g butter.

For filling:

  • 300 g cottage cheese;
  • two medium bananas;
  • berry syrup.

Preparing these rolls will take some time, because they need to be in the refrigerator to set their shape.

Pancakes are prepared as follows:

  1. The milk is heated, slightly warmer than room temperature.
  2. Flour and cocoa are gradually introduced into it.
  3. The egg is beaten with sugar and also poured into the dough.
  4. Let it stand for 15 minutes.
  5. Bake the pancakes and place them in a container with a lid, greasing the layers with butter.

The pancakes are ready, now you can start filling.

Little secret! If you doubt that cocoa will mix well in the dough, you can separately dissolve it in warmed milk. This way the cocoa will spread evenly throughout the dough.

The banana and cottage cheese are kneaded with a fork until mushy. If possible, use a blender to obtain a smooth mixture. Once everything is ready, you can start wrapping:

  • Place a heaped tablespoon of puree and cream onto the pancake.
  • The pancake is wrapped in a tube and placed on a plate.
  • The finished tubes are placed in the refrigerator for 2 hours.

After this, they need to be cut into equal parts with a sharp knife, placed on a plate and poured with syrup.

The dough should be as thick as liquid sour cream, but in no case like water. When you have completed this entire procedure, divide the dough in half, pouring one part into another container. But no matter what recipe you use for making pancakes, be sure to add vegetable oil, then your pancakes will not stick to the pan.

Now add cocoa powder to one part of the pancake dough, mix well, breaking up all the lumps. Pour the chocolate dough into any container with a spout. For example, you can use a small teapot, or a plastic bottle with a hole in the lid, or any other design that you can come up with.

Now we bake pancakes with cocoa. Heat the frying pan and pour a thin layer of white dough onto it, as usual. Attention! Do not immediately return the frying pan to the stove, but pour the chocolate batter onto the white pancake in a circular motion.
