And now the most interesting and relatively difficult (at least for me personally) - we will cut the chicken carcass so that the skin remains intact. In this case, we will remove everything except the wings and drumsticks. I’ll be honest: it’s not particularly difficult, but the work is quite dreary and nervous.

For the first 10 minutes I just twisted the chicken, not knowing which side was best to approach it from. In the end I decided to start from the back. By the way, when cutting like this, I advise you to use kitchen scissors rather than a knife - this will make it less likely that you will cut through the skin. So, we place the carcass with its back up and its neck away from us. Cut off the tail so that it remains on the skin. We cut off the lowest parts of the carcass where the chicken fat is located. We put our fingers under the skin as far as you can and separate the skin from the meat. Where there are thin cords that hold the skin, carefully cut them with scissors. We cut the skin along the spine with a sharp knife, being careful not to cut through it.
