I would like to recommend to all housewives a recipe on how to cook pancakes with kefir and milk. They turn out tender, thin and incredibly tasty. Great for a big family breakfast.

Thin pancakes with kefir and milk - a classic recipe

To be honest, it is difficult to bake truly thin pancakes with the addition of kefir. But you can try. Skill comes with experience, but the recipe is in front of you. These pancakes can easily be filled with any filling.

Take:

  • Milk - a glass.
  • Flour – 200-250 gr.
  • Kefir - a glass.
  • Granulated sugar - 3-4 large spoons.
  • Sunflower oil – 2 large spoons.
  • Eggs - a couple.
  • Table salt – a pinch.
  • Soda – ½ small spoon (even a little less).
  • A piece of butter.

Step-by-step preparation:

  1. Take both drinks out of the refrigerator in advance and let them warm up a little in room conditions. If you forgot, I advise you to warm it up a little, but no more than to 30-40 o C.
  2. Combine both drinks and beat in the eggs. Mix with a whisk.
  3. Add sugar and salt, add soda. Start whisking. Add sugar at your discretion, for those with a sweet tooth you will need more, all 4 spoons. There is no need to extinguish the soda; this will happen naturally due to the presence of natural fermented milk bacteria in the kefir drink.
  4. I advise you to enrich the flour with oxygen, and to do this, sift it. Add it to the dough in small portions, stirring each one thoroughly. It is more convenient and faster to work with a mixer here, since the lumps are easier to break up.
  5. The dough will turn out to be quite liquid and will foam slightly (the soda started its work by creating holes in the pancakes). Leave it alone for a quarter of an hour to allow the flour gluten to dissolve.
  6. Oil is added to the dough last so you can start frying immediately.
  7. Heat the frying pan thoroughly. For the first pancake, lightly grease it with oil. This procedure will not be needed further; there is enough oil in the dough.
  8. Adjust the frying temperature yourself, based on the characteristics of your gas stove. Heat over high heat, then reduce to medium and observe to find your sweet spot.
  9. Pour a small portion of batter into the pan, turning it so that the mixture spreads evenly over the surface.
  10. On the first side, the pancakes take longer to bake, about a minute. If you notice that the edges are browned, turn them over. On the second side, the tortillas will fry in a few seconds.
  11. Place the finished pancakes in a stack on a plate, brushing each one with butter.

Delicious, homemade pancakes with sour cream and yogurt - tasty, simple and quick.

I made these pancakes from what I had. And it turned out like this. We wanted pancakes. I looked in the refrigerator and found out that it had a little bit of everything: sour cream, yogurt and milk. I decided to combine these ingredients and see what comes out.

In other recipes, I gave preference to either sour cream or yogurt. But here there was simply no choice, because... the volumes of ingredients were small.

However, judging by the top photo (recipe for thin dough) , the pancakes turned out thin and with holes, as required for successful pancakes.

These pancakes are suitable for stuffing. In this recipe, I greased them with thick jam, which I prepare myself.

Initial composition of products.

The recipe for thin pancakes has the following ingredients: sour cream, curdled milk, milk, water, eggs, sugar, salt, soda and flour.

Preparation of ingredients.

I took a 3-liter bowl for this test norm. If it is less, it will be inconvenient to stir the contents.

First of all, add the liquid ingredients: milk and water. Then carefully spread the sour cream and yogurt. I measured the curdled milk with a tablespoon; the photo shows that it fits with a small heap.

Mix the contents either with a whisk, or you can lightly beat with a mixer.

Next add salt, sugar and mix thoroughly. We need to evenly redistribute the components in the dough.

Once the mixture is mixed, add the eggs. You can add them one at a time and beat each time, but I add all the eggs at once and only then beat them - it’s faster and easier.

After the beaten eggs, flour comes into play. There is no need to rush into adding flour, because... Lumps may form. I put 2 tbsp in a strainer. spoons and immediately sift into the liquid, and then beat thoroughly with a whisk until the flour dissolves and so on until the amount is gone.

The last batch of flour is mixed. Take a ladle, scoop out the dough, pour it out and see how thick it is. We don't need very thick dough, because... when we pour it onto a hot frying pan, it will be distributed in a thick layer, and the pancakes will turn out thick.

If the mixture is liquid, the dough may not set and you will not be able to turn the pancake over. In a word, if you are preparing pancakes for the first time, then you will have to try everything in practice. It’s okay if the first pancakes don’t turn out well – everything comes with experience.

But still, if the mass turns out to be thick, then it can be diluted with water. If the mass is too liquid, then add flour.

Now we have prepared the dough, now we leave it for 20-30 minutes for the flour to swell. This procedure is simply necessary, because... the flour will bind all the ingredients together.

30 minutes have passed, we begin to extinguish the soda. To do this, we need to take 1 teaspoon of soda, place it in a container and pour 1 tbsp. spoon 9% vinegar, mix.

The pancakes become lacy due to the many holes formed during baking. Any baking powder will ensure their appearance. But more often baking soda is used. Thin, lacy flatbreads are good with condensed milk for breakfast. Serve with sour cream, jam, or simply sprinkle with sugar, your household will be satisfied.

Required:

  • Kefir drink – 3 glasses.
  • Milk - a glass.
  • Granulated sugar – 3 spoons.
  • Baking soda - small spoon.
  • Salt - to taste.
  • Vegetable oil for frying.
  • Flour – 1.5 cups.
  • Eggs – 3 pcs.

How to bake:

  1. Gourmets advise beating the whites separately from the yolks. I'm lazy and beat them together, it doesn't affect the taste of the baked goods. To make the eggs easier to beat, add a little salt.
  2. Add sugar and whisk again. The mixture will turn slightly white and begin to foam.
  3. Pour kefir slightly warmed to room temperature, stir the mixture.
  4. Pour in milk, add baking soda, beat the mixture with a mixer.
  5. As in the previous step-by-step recipe, add flour gradually, kneading thoroughly each time to break up the lumps.
  6. Cover the bowl with a towel and let stand for 10-15 minutes so that the dough has time to “set.” Notice how the mixture bubbles. This means it's time to move on to the final stages.
  7. Pour in sunflower oil, stir quickly (you can use the mixer again). The oil will make the cakes easy to remove.
  8. Bake the pancakes by heating the pan well. Lubricate it the first time, but then there is no need for it. Pour the batter in small portions, otherwise the pancakes will turn out thick.
