Maslenitsa week begins on February 24, which ends on March 1, on the eve of the beginning of Lent. This holiday has been known among the Slavs since pagan times, which smoothly turned into a church holiday. The rituals of Maslenitsa came from paganism and became firmly attached to Christian customs.

Maslenitsa 2020 is the most fun and satisfying week. During Maslenitsa week, housewives bake pies, pancakes, pancakes, dumplings, and other pastries made from dough and treat their family and friends.

Pancakes were baked from wheat, millet, oatmeal, buckwheat, barley and pea flour. As a rule, pancakes were baked from yeast dough, and the use of soda was borrowed much later, from Europeans.

To avoid turning the first pancake into a lump, heat the pan well!

You can grease a frying pan in several ways: - cut potatoes or onions in half and dip them in oil; new dish sponge; use a brush or spray vegetable oil from a spray bottle.

Choux pastry pancakes

Ingredients: two and a half glasses of kefir, a glass of cream, two eggs, a teaspoon of soda, 4 tablespoons of sugar, two glasses of flour, 2-3 grams of salt, vegetable oil. Cooking steps:

  1. Place a saucepan with kefir on the stove and heat it slightly.

  2. In a plastic bowl, beat eggs, sugar and salt and add soda. Add flour without stopping stirring the dough.
  3. Bring the milk to a boil and carefully pour it into the dough, stirring all the time.

Recipe for pancakes with egg whites and mineral water

Ingredients: half a glass of kefir and mineral water, 2 egg whites, 100 grams of flour, salt and sugar. Cooking steps:

  1. Place egg whites (no yolks) in a bowl. Kefir, mineral water, salt and sugar are added. Everything is carefully put together.
  2. Then carefully pour in the flour and mix again until a homogeneous mass is obtained.
  3. Pancakes are baked in the same way as in the previous recipe.
  4. In this recipe, the pancakes will turn out airy due to the mineral water, and the use of proteins will allow you to bake a delicacy that is more dietary and lighter.

Tip: many housewives are faced with the question - how to separate the whites from the yolk? The easiest way is to take a clean sieve (for flour) and place it on a deep plate. Break an egg over a sieve. As a result, the whites will drain into the plate, and the yolks will remain in the sieve.

Classic recipe: thin openwork pancakes with kefir

The beauty of such baking is that it is as tender as possible. Pancakes should be prepared thin; during baking, holes will form and an openwork will appear. A dessert like this with holes looks very aesthetically pleasing; you can top it with your favorite jam and get the perfect breakfast. Almost every child remembers these classic thin pancakes from childhood.

Classic recipe

Ingredients:

  • 1 l – kefir;
  • 2 pcs – eggs;
  • 4 tbsp. - sugar;
  • 0.5 tsp - salt;
  • 1 tsp – soda;
  • 3 tbsp. - vegetable oil.

If the housewife wishes, butter can be added to the dough; this will make it possible to bake pancakes without greasing the pan. If you decide to lubricate it every time, then it is best to stock up on a special brush.

When there is too much oil, the taste is seriously affected. It’s best to add a drop every 2-3 pancakes and gently stretch it with a brush over the entire area of the pan.

  1. First of all, the eggs are mixed with sugar. You can safely use a blender for this, but it is better not to wait for white foam.
  2. A little salt is added, and kefir can also be added at this stage. The whole mass is mixed.
  3. Flour should be sifted and carefully added in small portions to the dough, this will help prevent lumps from appearing.
  4. All that remains is to add soda and achieve homogeneity of the dough. You can mix using a mixer.

Every housewife knows that depending on the kefir and proportions, the dough can have different consistencies. It is best to make it liquid enough so that the pancakes can be thin. To do this, you may need to independently regulate the amount of flour, which is why it is poured in small portions.
