What to make from old kefir - simple recipes with photos

Do you like homemade baking? I really do. But today it happened that I found a forgotten package of kefir in my refrigerator. You can no longer drink it - the expiration date has completely expired today. What can you do with this fermented milk product?

I didn’t have to rack my brains for long, because my children love homemade sweet pancakes, donuts, and, of course, the famous Zebra pie. So why not bake something from this list?

But it turned out that you can make not only this from old kefir, but also many different delicious things. Let's sort everything out and find out what to do with kefir that you can no longer drink.

What to make delicious from old kefir? Zebra Pie

What could be simpler than a homemade Zebra pie for tea? Today I would like to tell you a surprisingly simple recipe that anyone can use to prepare this delicious pastry.

What you will need:

  • 3 eggs,
  • 1 glass of kefir,
  • 100 grams of sugar,
  • 100 grams of butter,
  • 300 grams of flour,
  • 5 grams of vanillin,
  • 20 grams of cocoa powder.

These products are enough to make a pie for a tea party, which is enough for a large family.

How to cook

Remove the kefir from the refrigerator - it should be at room temperature. Melt the butter in advance.

Beat 3 eggs into a bowl. Add a glass of kefir and add 100 grams of sugar. Mix everything.

Carefully pour in the melted butter. Add vanillin and mix again. Divide the resulting dough into two portions.

Add cocoa powder to one of them, add flour, which must be sifted through a sieve. And stir to form a dough, but thicker than pancakes.

Do not mix the second part of the dough with cocoa, but simply add flour to it. Stir and also achieve a consistency slightly thicker than pancakes.

Pour the cocoa batter into the baking dish first, then the regular white batter. Bake at 180 degrees until fully cooked. This usually takes about 40 minutes.

What can you quickly cook from expired kefir? Of course, pancakes!

Pancakes are a simple and tasty dish that is perfect for breakfast. The most important thing is to use kefir only at room temperature, so do not forget to take the packaging out onto the kitchen table in advance.

Pie dough with kefir

Sometimes you really want to pamper yourself and your family with delicious homemade cakes. Every good housewife should have several recipes for making dough for pies and pies in her arsenal. The baked goods made with kefir-based pie dough are very tender and aromatic. Even an inexperienced housewife can not only easily but also quickly prepare yeast dough with kefir. In addition, it can be used both for baking pies or pies, and for pizza, which turns out incredibly tasty from such dough. The baked goods will look very beautiful and appetizing, spreading a simply divine aroma throughout the apartment. The pies, for the preparation of which any kefir dough recipe will be used, turn out very tender, fluffy, beautiful and rosy. They can not only be baked in the oven, but also fried in a frying pan. This recipe will be a real find for those housewives who know how to work with yeast dough, but it is also suitable for novice cooks who want to master the intricacies of making yeast dough. Cold pies can be easily reheated in the microwave, and the baked goods will become soft again, retaining their delicate taste. Yeast kefir dough always rises perfectly, and all you have to do is wait until it rises once, and you can prepare a variety of delicious foods. Pies and pies will always be fluffy, one might say airy, and you won’t have to spend too much time or effort on preparing them. You can prepare not only yeast dough, but also yeast-free dough. Each housewife will be able to choose a more suitable option for preparing kefir dough.

Yeast dough with kefir
Ingredients:
2 tsp.
sugar, ½ l kefir (can be replaced with sour milk), 2 tbsp. l. sunflower oil, 1 kg. flour, 1 raw egg, 1 pack or 11 g of yeast (dry), ½ tsp. salt. Preparation:
First we make the dough. To do this, dilute yeast in a small amount of warm water. Cover the container with yeast with a clean plastic bag and leave for 10 minutes (the yeast should double in volume). Take kefir (room temperature) and dissolve sugar and salt in it, add the egg. As soon as the yeast rises, add it to the kefir, stir well and pour in the oil. Now knead the dough, gradually adding flour in small portions. At this stage of cooking, it is very important to ensure that the flour does not form lumps, otherwise the finished pies will be tasteless. Don't add too much flour, otherwise the dough will be too tough. Grease a bowl with a small amount of sunflower oil and place the dough in it, and cover with a clean bag on top. To prevent the dough from sticking to the polyethylene, the inside of the bag will also need to be greased with oil, and the risen dough will be easy to separate. And put a terry towel on top of the bag and leave the container with the dough in a warm place, it should fit well. After about half an hour, the dough will increase several times in volume and literally surprise you with its airy appearance, resembling a lush cloud. Now we begin to knead the dough, and you can start making pies. If you use this recipe, then you should make small pies, since during frying or baking the dough will still rise.

Pie dough with kefir

Kefir dough has one main advantage - now you don’t have to guess whether it will rise or not, since the dough will definitely rise, because kefir contains unique lactic acid bacteria, which will release carbon dioxide during the fermentation process.
In addition, pies made from this dough always turn out porous, tender and incredibly tasty. Ingredients:
1 tbsp.
kefir (fat content 2.5%), 1 tsp. salt, 11 g dry yeast, 1 tbsp. l. granulated sugar, ½ tbsp. sunflower oil, 3 tbsp. flour. Preparation:
First, take the butter and dilute it with kefir, and then put the mixture on the stove and heat it slightly (preferably in a water bath), gradually add salt, and then sugar. We take some warm water, in which we dilute literally a few pinches of sugar, and then pour the yeast into the water. Now you need to wait as long as indicated on the yeast package (most often you need to let the yeast brew for 5 to 15 minutes). The prepared yeast mixture is added to the heated kefir and butter. Now let's start kneading the dough. To make the dough softer and airier, you need to sift the flour in advance and then add it in small portions to the dough, while kneading it well. You need to make sure that no lumps form in the dough. After the dough is completely ready, form a ball out of it, put it in a bowl, cover the top with cling film and place it in a warm place for half an hour so that it can rise well. This dough can be used to make pies in a frying pan, pizza, or bake pies in a slow cooker or oven.

Yeast-free pie dough

If you don’t want to bother with yeast, then you should familiarize yourself with the recipe for kefir dough, to which you don’t need to add it.
In terms of taste, such dough will be in no way inferior to yeast dough. Ingredients:
1 tsp.
salt, 1 tbsp. kefir, 1 tsp. soda, 40 ml. sunflower oil, 1 tsp. sugar, 400 g flour. Preparation:
First, heat the kefir a little in a water bath and mix it with soda, add salt, then sugar, and finally add butter (about 1 tbsp). Mix all the ingredients thoroughly, and you can proceed to the dough kneading procedure. While kneading the dough, add flour in small portions (it is advisable to sift the flour in advance to make the dough airy and tender). At first, the dough can be kneaded with a kitchen whisk or spoon, but as soon as it becomes difficult to stir, we begin to knead with our hands. However, it is very important to remember not to knead the dough too hard so that it does not become too tight. After the dough has become elastic and has stopped sticking to the surface of the table and your hands, we form a ball out of it, put it in a deep bowl, and cover it with plastic on top. Leave the dough alone for half an hour, after which you can start making pies.

Liquid pie dough with kefir

This dough is prepared very quickly, one might say, instantly.
Since very little flour is added in this case, the dough will rise much faster. Pies for which this dough will be used must be baked in muffin tins or deep-fried. Ingredients:
½ tsp.
soda, 2 tbsp. flour, 2 eggs, ½ tsp. salt, 250 ml. kefir Preparation:
First, take a deep bowl and beat eggs with salt in it. At this time, slightly heat the kefir in a water bath, then add it to the beaten eggs and mix everything thoroughly. Now gradually add pre-sifted flour into the mixture (sift the flour together with soda) and knead the batter. If convenient, you can use a spoon to knead, but it is best to grease your hands with a small amount of oil and knead the dough with your hands. Just as in previous recipes, the dough should be placed in a warm place for half an hour and covered with film. Of course, the liquid dough will not be so easy to work with, so before we start shaping the pies for deep frying, we grease the handles with oil, mold the patty, then wash our hands with water, and again we need to grease them with oil for sculpting the next patty. The result is very tasty pies, so it's worth putting in a little effort.

Quick kefir dough for pies

This dough is very easy and simple to prepare, and in this case you can use absolutely any filling.
Ingredients:
1 packet of baking powder, 11 g of dry yeast, 3 tbsp.
kefir, ½ kg of flour, 2 eggs, Salt and sugar - a little, to taste. Preparation:
Pour kefir into a mug (one glass), then add sugar and add yeast - mix everything well.
In order for the yeast to start “working” immediately, you need to use kefir at room temperature; it can be slightly warmed up. Pour two glasses of kefir into a deep bowl, which should also be at room temperature, and then beat in two raw eggs. Add flour and mix everything well - you should get a mass of homogeneous consistency. Next, pour kefir and yeast into the main mass and add baking powder (can be replaced with soda) and knead the dough thoroughly again. The dough will turn out a little liquid, so continue to gradually add flour and knead the dough. You need to make sure that the dough does not become too elastic, as in this case the pies will not be fluffy and soft. Place the tender dough in a bowl and leave it in a warm place for half an hour so that it can rise well. While the dough is rising, you can start preparing the delicious filling. Filling with liver Ingredients:
1 bay leaf, 300 g of fresh lard, 3 onions, 1 kg of pork liver, Salt - a little, to taste.
Ingredients:
First, let's prepare the liver - wash the liver thoroughly and cut into small pieces, and then boil. During cooking, add a bay leaf, a couple of allspice peas and salt to the water. As soon as the liver is cooked, pass it through a meat grinder. We do the same procedure with lard. If desired, you can add some mushrooms to the filling, which will make the pies more aromatic and tasty. By this time the dough should have risen, so you can start forming the pies. Divide the dough into small pieces, each of which is rolled into a flat cake. Place the filling in the center of the cake and carefully pinch the edges of the pie so that the filling does not fall out during cooking. Fry the formed pies on both sides in a frying pan with hot sunflower oil until an appetizing golden brown crust appears.

Filling with egg and rice
Ingredients:
2 tsp.
ground black pepper, 2 green onions, 1 onion, 100 g rice, 4 eggs. Preparation:
First, peel the onion and cut into small cubes, and then lightly fry in a frying pan in sunflower oil. Boil the rice (until half cooked) and eggs in advance. Grind the green onion feathers and mix all the ingredients, add some spices and salt. We wrap the filling in dough and bake the formed pies in a frying pan in sunflower oil.

Useful tips from professional chefs

If you strictly follow the recipes, then there should be no problems with preparing kefir dough for pies, but you should still take into account the advice of professional chefs: - in the case when the pies are baked in the oven, they should be placed on a baking sheet with the seam facing up, and into the frying pan - seam side down; — in order for the pies baked in the oven to turn out beautiful and even, you need to gradually increase the temperature. It is also worth remembering that the baking sheet with pies must be placed in an already preheated oven; - if 1st or 2nd grade flour is used for pies, then you need to add a little starch to it before starting to prepare the pies. It is best to use extra-grade flour; — for inexperienced cooks, it is best to use dry yeast, since it is very difficult to “work” with fresh yeast. But if you do use fresh yeast, it is important to ensure that it does not brew, so you need to gradually stir it in warm water (kefir or milk);

- before you start preparing the pies, you will need to sift the flour through a sieve, preferably carrying out this procedure twice. Thanks to this simple technique, the pies will turn out more tender and fluffy; - kefir can be replaced with yogurt, homemade sour milk is also suitable; - You should only use kefir at room temperature. If the kefir is very cold, then it can be warmed up a little in a water bath.

Is it possible to cook with expired kefir? Which kefir is safe, successful recipes

Many housewives start preparing baked goods from expired kefir and don’t even notice the difference. Kefir, which has not changed and has not acquired a rancid smell, can completely replace fresh one. Feel free to use it to prepare dishes such as pancakes, pancakes, pies, etc. The main thing is that it undergoes heat treatment, it will kill all harmful bacteria.

Expired kefir - is it good for baking?

It is unlikely that anyone will drink expired kefir, because this risks intestinal upset or severe poisoning. But if the product was stored in the refrigerator and there are no visible signs of spoilage, then throwing it away would be wasteful.

Advice To get the maximum benefit from kefir, drink it fresh, preferably on the first day. After 24 hours, beneficial microorganisms begin to lose their potency. And an hour or two after the expiration date, the number of harmful microorganisms in the drink increases.

An important rule: smell the expired kefir and taste a drop. If there is bitterness and an unpleasant odor, it is better to get rid of the product and buy a new one.

What can be prepared from expired kefir:

  • pancakes,
  • pancakes,
  • pies,
  • crumpets,
  • biscuit,
  • mannik, etc.

What to bake: recipes and features of using kefir

The safest homemade product is that it does not go rancid like store-bought ones. There are many different impurities in supermarket products, and it is unknown how they will behave in your body.

Homemade kefir will simply ferment a little, but store-bought kefir will quickly begin to give off a smell, despite the preservatives in the composition. The standard shelf life of this fermented milk product, provided it is kept in the refrigerator, is one to two weeks.

It’s interesting that a closed pack will last a couple of days after the expiration date in most cases, but an open one will quickly acquire a bitter aftertaste.

Advice Miss Clean magazine notes that there are differences between being overdue and overdue. Keep in mind that a month after the expiration date, kefir is hazardous to health. Use the product within the first two to three days after the expiration date, maximum within a week.

Pancakes

Lush pancakes are most often prepared using fresh kefir. Delay is also used for this purpose. Some people think that with a sour drink it turns out even tastier and more fluffy than with a regular one. This probably depends on the original composition and quality of kefir, but the more acidic the product, the more beautiful the baked goods turn out.

We recommend: Who should not eat spinach and why is it good for others?

Recipe for simple, but fluffy and tender pancakes:

  1. Combine 0.5 kg of flour, 0.5 tsp. salt, 5 tbsp. sugar and 0.5 tsp. soda
  2. First, remove kefir (1 liter) from the refrigerator and let it warm to room temperature.
  3. Slowly add the dry mixture to the sour kefir, add 2 eggs.
  4. Fry fluffy pancakes from a dough with the consistency of thick sour cream in a large amount of vegetable oil.

Remember that sugar can aggravate the subtle bitterness of expired kefir. Reduce the amount of this ingredient by half, especially since sugar is not necessary in pancakes. It is better to serve them with jam, honey, condensed milk and other sweeteners.

Tip If kefir has a fermented smell, dilute it with milk. This way the dough won't have a weird yeasty flavor.

Sour kefir can also be used in other pancake recipes.

Pancakes

Openwork kefir pancakes are a favorite of many housewives. A product that is expired by a couple of days will not affect the splendor and taste of such baked goods.

How to make simple kefir pancakes:

  1. Mix 0.5 liters of warm kefir and the same amount of sparkling mineral water.
  2. Add 3 large eggs (or 4 eggs of the second category) into the mixture, add a little vegetable oil to make the dough elastic.
  3. Add salt and sugar.
  4. Add flour in small portions until the dough has the consistency of liquid sour cream.
  5. Fry the pancakes by first greasing the heated frying pan with oil.

To ensure the dough bakes well, use room temperature ingredients and let the mixture sit for a while before going into the pan.

Cottage cheese from homemade kefir

Kefir with a natural composition produces a very tasty and tender granular cottage cheese. This is suitable for further baking (cheesecakes, cheesecakes) and for baby food.

To evaporate the moisture and get cottage cheese, follow the instructions:

  1. Prepare a water bath: you will need a large wide saucepan and a glass jar of a smaller diameter.
  2. Fill the jar 2/3 full with kefir.
  3. Place a piece of thick cloth on the bottom of the pan. Place the jar of kefir inside and pour water into the pan so that it rises slightly above the level of the sour milk.
  4. Place the water on low heat. The kefir will heat up slowly.
  5. Watch for the moment when bubbles begin to appear in the drink. Time it for 5 minutes and wait.
  6. Prepare a colander, line it with gauze so that a minimum of curd flows out.
  7. The longer the kefir sits in a water bath, the drier the curd grains will turn out.
  8. Take out (just carefully!) the hot jar of kefir and pour the contents into a colander.
  9. Leave the cottage cheese for half an hour, let the moisture drain under its own weight.
  10. The last step is to cover the cottage cheese on top, press it with some dish and leave for another couple of hours.

We recommend: Let's check the naturalness of sour cream using iodine and boiling water!

Kefir should not boil, otherwise the cottage cheese will not turn out. That is why housewives are cunning with a water bath and low temperatures. And, of course, the best option for making cottage cheese is homemade kefir.

The expiration date on the packaging is indicated for a reason, so it is better to adhere to the indicated dates. Do not risk your health and do not cook with kefir that has expired by a week or more. You can always buy fresh product in the store.

Cooking technology

Shortbread dough without butter and margarine is completely unpretentious, and even beginner housewives can make it.

  • First of all, let's prepare the classic crumble. To do this, you need to grind the flour with butter. This is the basis of our preparation.
  • Beat sugar, egg, kefir with a mixer until foamy. This will give the products airiness.
  • Mix both parts and knead into a stiff dough.
  • At this stage, housewives often add less flour to make the cookies more tender. But this is a mistake. Shortbread dough should not be very soft, otherwise it ceases to be shortbread. Therefore, don’t be shy and add enough flour to get a dense, beautiful lump of dough at the end. You will have to roll it out; you just won’t be able to stretch it with your hands. But its density is lower than that of dumplings, so you won’t get too tired.

The dough is ready to use immediately, you don’t have to chill it in the refrigerator and wait. The main thing is to decide what you will make of it.

    Pancakes made with expired kefir

Lush pancakes are perhaps the most common dish made from this product. They are prepared very simply and from inexpensive ingredients.

Mix the ingredients in this order:

    • 500 grams of flour
    • Half a teaspoon of soda
    • Half a teaspoon of salt
    • 5 tablespoons granulated sugar
    • One liter of expired kefir at room temperature - it must first be removed from the refrigerator
    • 5 tbsp. sunflower oil
    • A little vanilla and cinnamon
    • Knead the dough until it becomes thick. And then let it rest, covered with a damp towel for 10 minutes.
    • Heat a frying pan and pour a couple of tablespoons of sunflower oil into it
    • Spoon the dough directly
    • When the pancakes have a nice golden hue on both sides, cover the pan with a lid for one minute.

This is a basic recipe that can be modified as you wish. For example, you can add a grated apple or a banana chopped in a blender. Or diversify with dried fruits.

For example, you can prepare fluffy custard pancakes.

    Mix the dough from:

    • Glasses of kefir
    • Glasses of boiled water at room temperature
    • Add half a teaspoon of salt and a couple of tablespoons of sunflower or olive oil
    • Pairs of large chicken eggs
    • Two glasses of flour

After kneading, let the dough rest for about 15 minutes.

    • Quench half a teaspoon of baking soda with a small amount of bite
    • Grease a heated frying pan with vegetable oil
    • Spread the dough with a tablespoon, giving shape to future pancakes
    • Fry on both sides, then cover the pan with a lid and simmer the pancakes for another couple of minutes
