Step 1: Prepare the dough.
Before starting cooking, be sure to defrost the dough so that it becomes soft and pliable. Then divide it into two equal parts, set one aside and place the second on the countertop. Important:
Prepare your work surface in advance by sprinkling it with a little flour to prevent sticking. Roll out the lined half of the puff pastry to the size of your pan. Lightly roll out the second half using a rolling pin, and then roll it into a sausage roll and use the tip of a knife to make cuts on it in a checkerboard pattern. Of course, you can do this later, when you are already closing the pie.
Step 2: Prepare the lingonberries.
Sort the lingonberries, removing small twigs and random leaves. Rinse the berries with warm water, after pouring them into a colander. And then fix them on the weight to allow excess moisture to drain; it should not get into the pie, because the berries are already quite juicy.
Step 3: Prepare layer cake with lingonberries.
Set the oven to preheat to 180 degrees
Celsius.
At this time, grease a heat-resistant baking sheet with vegetable oil and place a single layer of dough in it. Pour lingonberries onto it, level them with a tablespoon and add sugar, trying to distribute it evenly throughout the filling. Cover the top of the pie with the second half of the puff pastry, the same one on which we made the cuts. Use your fingertips to secure the edges together. Leave the cake to rest in this form for 15 minutes
in a warm, not ventilated place.
But first, using a special brush, you need to grease the product with a broken chicken egg. Once the cake has rested for the required amount of time, place it in the preheated oven for 20 minutes
. During this time it will brown and become ready. As soon as your dessert is ready, remove it from the oven and wait a little until it has cooled slightly, only then can you start serving the pie.
Step 4: Serve layer cake with lingonberries.
Serve layer cake with lingonberries as a dessert or afternoon snack.
You can dress it up with powdered sugar, heavy sour cream or whipped cream. That's all, your sweet and truly homemade dessert is ready, all that remains is to pour yourself and everyone gathered at the table a cup of hot tea and start dessert. Bon appetit! In the cold season, when it is very difficult to get fresh lingonberries, you can replace them with frozen ones. You can often find recipes where thinly sliced apples are added along with lingonberries.
It is impossible to think of a more summer dessert than lingonberry pie. The combination of tender dough with juicy berries gives the baked goods an incredible light and fresh taste. There are many recipes for baking lingonberry pie, and each of them is unique. - Grease a baking sheet with oil. Separate a little more than half of the dough. Roll out this piece and place it on a baking sheet, forming the sides of the pie.
- Spread the lingonberry filling on the dough. The second piece of dough should be rolled out thinly and placed on top of the filling, tightly sealed at the edges. And go over the dough with a special roller to get a pattern like in the photo.

Filling
- Lingonberries (I took frozen) - 400 g
- Sugar (it was still a bit bitter for me, I would have added more, but lingonberry lovers said it was just right) - 6 tbsp. l.
- Potato starch - 2 tsp.
- Water (for diluting starch) - 2 tbsp. l.
Cooking time: 180 minutes
Recipe for “Yeast pie with lingonberries”:
I use a bread machine to knead the dough. I load all the ingredients for the dough into it (except for the egg for greasing and powdered sugar for sprinkling) and set it to the Basic Dough program (time 2 hours 20 minutes).
I didn't defrost the lingonberries. Pour the berries into a saucepan with a thick bottom. Add granulated sugar. Mix well and put on the stove to boil.
When the lingonberries begin to boil, dilute the starch with water (carefully, without lumps).
The lingonberries actually boiled. Let it boil for a couple of minutes, remove from heat and pour in the starch solution in a thin stream. Mix well and set to cool. The filling will thicken as it cools.
I separated 1/4 of the finished dough for decoration strips. The rest was rolled out into a rectangular layer, placed in a mold and all the filling was placed on top. We spread the filling so that the sides remain.
Now roll out the reserved 1/4 of the dough and cut into strips. I cut with a patterned wheel-knife. It turns out more interesting)
We place the strips on the filling, lightly pinch them to the bottom layer and wrap the “sides” so that the place where the strips are attached is not visible.
Brush the pie with egg and place in the oven until browned (about 20-25 minutes) at 210 degrees.
Sprinkle the finished pie with powdered sugar.
Enjoy your tea!
The taste is clearly lingonberry, bitter. If I were alone, I would have put more sugar in the filling or added an apple... But since there are lingonberry lovers in the house (they eat them even without sugar), the pie went with a bang PS This is my first step-by-step recipe, so don’t judge too harshly , but ready for constructive criticism

That is why it will be useful for every housewife to know the recipe for lingonberry pie.
Recipe for lingonberry shortcrust pastry pie
A dessert with lingonberries and sour cream is considered a good option for this pie. It is made with shortbread dough. The delicacy turns out soft, crumbly and incredibly appetizing.
Ingredients:
- flour – 320 g;
- eggs – 2-3 pcs;
- sugar – 130 g;
- vanilla sugar – 1 teaspoon;
- baking powder - 1 teaspoon;
- butter – approximately 80 g;
- lingonberries (fresh berries) – 180 g;
- sour cream – 170 g;
- sugar (for cream) – 100 g.
First you need to knead the dough by adding flour, butter, eggs, regular and vanilla sugar, baking powder and melted butter. The dough should be elastic so that it holds its shape well later. By the way, it can also be yeast. In this case, you will additionally need to add 10 g of pressed yeast, which should first be diluted in warm water and left for 15 minutes. Only after this can they be mixed with flour.
Now you should move on to the filling. Fresh berries will need to be washed and sorted so that you don’t accidentally get spoiled ones. It is important to ensure that there is no water left in the lingonberries. During cooking, it will release its own juice, and foreign liquid can spoil the dough. Therefore, it is better to transfer the berries to a colander and let them dry. You can additionally add chopped apples; they will not spoil the taste of the delicacy at all and will be an excellent filling.
Now you can make sour cream. You will need to mix sugar and sour cream in a bowl using a mixer. After this, the cream should be placed in the refrigerator. Then you can move on to the next stage - baking.
The dough must be carefully placed in a baking dish and all excess removed. Place the filling on top, then place the dish in an oven preheated to 180 degrees. You can easily answer the question of how to cook lingonberry pie in the oven. The sweet dish should be baked for about 30 minutes. When it is ready, you will need to remove the mold from the oven and place the cream on top of the dessert, leveling it with a spoon. The opened pie should cool, and after that it will need to be placed in the refrigerator and allowed to brew for about 3 hours.

Both frozen and fresh lingonberries are suitable. In the first case, pre-defrost the fruits, drain off excess water, and dry them on a napkin. Mash the cottage cheese to avoid the appearance of unwanted lumps and make the berry-curd filling more tender. Add eggs beaten with sugar to the resulting mixture. Add semolina to this and move carefully again. To prevent the mixture from becoming too thick, thin it with an additional egg. Check what you get for sweetness. In any case, it would be a good idea to add an extra portion of sugar, which will distribute the sweetness evenly. Finally, add the berries to the curd-semolina mixture; This way the elasticity of their shape will be maintained, and the cottage cheese will not start to get soggy. By carefully mixing the berries into the curd mass, you will get the most delicate curd filling with a bright taste, which will become your favorite when making lingonberry pie.
The result should be a wonderful homogeneous mass, in which each berry is wrapped in a thin layer of sugar. A balanced berry addition to the pie without any extra steps is ready!
