    Useful tips

    • — I add kefir to the charlotte. And I don’t add baking powder, baking soda, or baking powder. Everything rises perfectly on kefir.
    • — I like it when there are a lot of apples. This, of course, is a matter of taste, but try baking charlotte once with a lot of apples, which covers a thin layer of dough - it turns out great.
    • — When baking, look at the appearance of the pie. If a caramel-colored crust has formed on top, the pie is ready. Check the readiness with a wooden stick; if the dough does not stick, you can remove it.
    • — I give recommendations on temperature, but you must understand that these recommendations are conditional. The fact is that all slabs are different. Even I have one stove that bakes one pie at 190 degrees, and the other - the same pie, according to the same recipe - requires 200 degrees. The technique you work with needs to be carefully studied and constantly experimented with.
    • — It’s best to serve charlotte warm. It can be served with a scoop of ice cream; custard goes well with it. I also once made a cream from homemade sour cream with tangerines - it was very tasty.

    incredibly simple recipe for Apple Charlotte

    Apple pie - charlotte - the fastest, simplest recipe for tea. I am giving you an incredibly simple recipe that is very easy to remember. The main part is dough and apples, but you can add different additives: dried fruits, nuts, a couple of spoons of some aromatic alcohol, various seasonings (cinnamon, cardamom, vanilla); Sprinkle with powdered sugar or cream on top (I’ll tell you about custard right now). You can actually turn a charlotte into a cake: cut it lengthwise into 2 layers, layer it with cream - butter, protein, cream - decorate, for example, with white chocolate shavings or sprinkle with nuts.

    (for a mold 25cm in diameter):

    Basic base: 3 eggs 1 cup flour 1 cup sugar 3 large apples 0.5 teaspoon baking powder

    Additives: 100g raisins 100g nuts

    For the custard: 2 yolks 4 teaspoons powdered sugar 4 teaspoons flour 200 ml milk

    Cooking time: 40-50 minutes.

    I am writing in glasses, not in grams - if you have a faceted one, it will be even better - it is important that the amount of flour and sugar, by volume, in any case, will be equal. Well, take larger eggs, they won’t spoil the charlotte like butter, like porridge.

    With added banana

    Required Products:

    • four eggs;
    • two hundred grams of flour and sugar;
    • 10 g baking powder;
    • four apples;
    • two bananas.

    Preparation:

    1. Separately, beat eggs with baking powder and sugar.
    2. Gently add flour.
    3. The fruits are finely chopped.
    4. Place apples + bananas + apples in a greased pan.
    5. Fill with flour mixture.
    6. Bake for forty minutes, oven temperature at least 160 degrees.

    With cottage cheese

    Prepare the following products for a pack of cottage cheese:

    • granulated sugar - two hundred grams;
    • three eggs;
    • one hundred grams of sour cream;
    • a couple of apples;
    • a glass of flour.

    Step by step recipe:

    1. Pour the cottage cheese into a deep bowl. Add granulated sugar and eggs. Using a mixer, bring to a homogeneous consistency.
    2. Add sour cream to the curd mixture. A little vanilla sugar and butter (melted).
    3. Add flour and baking powder little by little.
    4. The resulting dough is poured into a greased mold.
    5. Place chopped apples on top.
    6. Bake for about an hour, heating temperature does not exceed 170 degrees.

    How to make apple pie without a mixer?

    To rid the dough of excess viscosity, a small amount of starch is added in this recipe.

    Components:

    • two hundred grams of flour;
    • 250 grams of granulated sugar;
    • three chicken eggs;
    • 30 grams of starch;
    • a teaspoon of baking soda;
    • 30 milliliters of oil (vegetable);
    • a couple of tablespoons of sour cream.

    Step-by-step recipe for charlotte with apples without a mixer:

    1. Cut six sweet and sour apples into thin slices, so as not to darken, you can sprinkle lemon juice on them.
    2. Pour the flour into a shallow bowl, add beaten eggs, sour cream, granulated sugar, vanilla (to taste) and vegetable oil. Since the cake is prepared without a mixer, a wooden spatula or spoon is used to mix the ingredients.
    3. Add apples to flour mixture.
    4. The mold is rubbed with butter (butter) and sprinkled with breadcrumbs (breadcrumbs).
    5. Carefully pour the dough into an even layer.
    6. Bake for one hour in the oven at 160 degrees.
    7. If desired, baked goods can be decorated with any berries or powdered sugar.

    Even more baking recipes

    Charlotte with apples in the oven is so easy to prepare that even novice housewives who have no experience in baking can handle it. And what could be difficult here? Quickly chop the apples, knead the dough for a few minutes, pour the dough over the apple slices and place in the oven for half an hour. Voila - a consistently delicious pie is ready without any extra effort! The simplicity of preparing charlotte allows you to cook it almost every day, delighting your household and loved ones with new variations of your favorite pie. So, for example, you can add other fruits or berries to charlotte that go well with apples, such as pear, plum, apricot, pineapple or cranberry, as well as nuts, raisins or cottage cheese - in the latter case, your pie will turn out incredibly tender. In addition, you can experiment with ground spices - here at your disposal are cinnamon, nutmeg, cardamom, cloves, ginger and allspice. Citrus zest also perfectly complements the taste of apples and allows you to diversify your usual recipe.

    Charlotte with apples in the oven

    Antonovka is considered the most suitable apple variety for charlotte, since the aromatic fruits, which have a pleasant sourness, harmonize wonderfully with the sweet biscuit, complementing each other’s taste. Also, charlotte will turn out delicious using green apples of the Semirenko and Granny Smith varieties - since these varieties have rather dense peels, it is best to first peel the fruits. If you still have sweet apples on hand, adding sour fruits and berries to the pie, for example, sour plums or black currants, will help you get out of the situation. Remember - the sweeter the dough, the more sour the apples are suitable for charlotte. In any case, whatever apples you choose, they should be firm and not overripe. To prevent the apples in the charlotte from releasing excess juice during baking and from sinking to the bottom, they should first be rolled in flour. By the way, apples can be used not only raw, by cutting them into slices, as is most often done - you can also fry the apple pieces in a mixture of sugar, cinnamon and butter so that they are slightly caramelized. It will turn out very tasty and unpretentious. The apples can be placed on the bottom of the pan, in the middle between two layers of dough, or on top of the dough.

    Charlotte with apples

    As for the dough itself, many housewives have long ago learned the rule that it is strictly forbidden to open the oven door during baking, so that the sponge cake does not settle, turning into a dull sticky mass. Another trick to getting a successful sponge cake is to beat the yolks and chilled whites separately and then combine them. And, of course, it is extremely important to preheat the oven to the desired temperature (10-15 minutes before baking the pie) - otherwise you will end up with a burnt crust with raw dough inside.

    Charlotte with apples in the oven can be served either hot or cold, and the ideal companions for it are a scoop of vanilla ice cream, whipped cream or custard. How can you resist such a gastronomic pleasure? Of course not, so we advise you to quickly prepare delicious charlotte according to our recipes!

    How to prepare a balloon? Mistress's secrets

    What is the name of the sponge cake with apples? Which Charlotte once baked a dessert and immortalized her name?

    There are several versions of the origin of the names, to suit every taste. According to one of them, the wife of King George III, the English Queen Charlotte of Mecklenburg-Strelitz (1744−1818), gave her name to the sweet dish. According to legend, it was she who advised the court cook to prepare a light dessert from apples, eggs, milk and sugar.

    Another version is close to the first, only unnamed: translated from Old English, the word “charlyt” means exactly the same sponge cake with fruit made from beaten eggs and sweet milk with flour.

    Russian charlotte is simple to make, it is not difficult to prepare, minimum ingredients, maximum taste.

    You can make charlotte from pieces of yesterday's bread, soaked in an egg mixture or milk, place it on the bottom of a greased form, place pieces of peeled apple (pears, plums, apricots - you can use any fruit) on it. Cover the top of the pie with the same soaked bread pieces and bake.

    This is a classic recipe for a rescue pie: tasty, fast, budget-friendly and no need to throw away stale bread.

    Typically, charlottes are baked in the fall, when the apple harvest is good and prices for these fruits begin to creep down.

    In our family, bread charlottes are not welcome. We don’t buy white bread or loaves, but we have enough rye bread for several dinners without any leftovers. Since there is nothing to recycle, we prepare the main dough with a minimum of ingredients. And without milk.

    In the culinary recipe for charlotte, the main thing is not the apples, but the eggs - the result depends on how you beat them and mix them with flour.

    Beat four large eggs until stiff with a glass of sugar. Beat thoroughly, preferably with a mixer, since hand whipping will take time and effort. Shake with good thoughts, turn on classical music. My favorite option is “Waltz of the Flowers” by P. I. Tchaikovsky. The theme of airiness will be set.

    Sift one glass of flour, saturate it with oxygen, and “fluff” it. For a mold with a diameter of 20 cm, you no longer need flour, the sponge cake will rise and there will be enough volume. Too much flour will kill the cake.

    Add 0.5 teaspoon of vanilla sugar and a teaspoon of baking soda to the sifted flour. You can add a teaspoon of cognac to the dough for taste. To achieve airiness of the dough, add 100-150 grams of melted butter. It will add calories and tenderness.

    And slowly add the beaten eggs to the flour, stirring carefully so as not to damage the foam.

    To experiment, you can beat the whites and yolks with sugar separately, it will turn out more airy. Although this recipe contains the most important cooking secret: mix everything together at once and bake without opening the oven, it will still turn out delicious.

    Prepare the filling: peel 5-6 large apples and cut into thin slices. Soft and very sweet apples are not suitable for charlotte; they will turn into puree during baking. The ideal option is apples of the winter variety Semerenko, glossy green, elastic, sweet and sour.

    There should be a lot of filling. If there are no apples, take pears or mix both fruits. There is no need to pre-cook the apples; we clean and cut them immediately before baking.

    Grease the bottom of the mold generously with butter; you can immediately pour out part of the dough, lay out the apples and pour the rest of the dough on top. Or you can sprinkle sweet crackers or cookies, previously ground in a coffee grinder, onto the butter. Then pour not half of the dough onto the bottom of the pie, as in the first case, but only a third.

    Photo: Depositphotos

    You can pour apples into the dough randomly, or you can show off, lay them out in a circle or in your own creative pattern - creativity is encouraged.

    Before baking the biscuit, preheat the oven by setting the temperature to 180 degrees. Place the pie in the preheated oven for 20-25 minutes. Before this time, it is dangerous to open the oven lid: the biscuit may fall off.

    Check readiness after 20-25 minutes with a toothpick by piercing the pie in the middle. If the wooden stick is dry, the charlotte is ready.

    You can decorate a charlotte in different ways.

    Sprinkle with powdered sugar or nut crumbs, coconut flakes.

    It is good to sprinkle powdered sugar onto previously prepared stencils, for example, cut out several silhouettes of apples from paper and arrange them in a circle. Or place a round plastic napkin with a pattern of slits on the cooled pie. Then carefully pour powdered sugar through a strainer and remove the stencils and napkin. Beautiful!

    Charlotte is delicious both hot and cold.

    How to Decorate an Apple Pie with Dough

    Every housewife knows how to lay out a classic lattice of dough for baking. However, not all novice cooks know that you can decorate an apple pie using a plastic dough mass in different ways:

    1. Cutting out figures. This is done with a small sharp knife, baking molds or special cutters. The dough layer is rolled out so that its thickness does not exceed 4 mm. Using the selected device, figures are cut in the shape of flowers, hearts, leaves, birds, etc. The final decor depends on the creative idea of the cook.
    2. Flour crumbs. Sugar, flour and softened butter are kneaded into a thick dough that crumbles in your hands. Rub the dough in your palms and sprinkle it on the charlotte before baking in the oven.
    3. Pigtail. Cut 3 thin strips from the dough and weave them into a classic braid. Before baking, the decor is moistened with water or beaten egg yolk. If you have a special knife for decorating pies, strips of dough can be cut so that their edges are curly. The surface of the pie or its edge is decorated with a braid.
    4. Original cutouts on the top layer of dough. The dough is rolled out thinly and a random pattern is cut into it using a knife or molds. The cake is covered with a sheet, its edges are beautifully decorated and baked in the oven.
    5. Modeling of figures. Figures can not only be cut out on a plane, but also sculpted. This three-dimensional decoration in 3D format will primarily appeal to children. Flowers, stars, mushrooms, berries, animal figures, etc. are formed from the plastic mass. Before baking, they are greased with beaten egg yolk.

    Dough decor will look more original if you combine different versions of it in one pie. It is better to start experimenting with charlotte design with simple techniques, and as you acquire skills, you should gradually complicate the technique.

    • 130 grams flour
    • Three yolks
    • 10 grams vanilla sugar
    • ½ teaspoon baking powder
    • 30 grams of sugar (if you have a sweet tooth, you can add it to your taste)
    • 90 grams butter
    • Salt - a pinch.

    For filling:

    • 1200 grams of apples (peeled) or 950 grams (unpeeled)
    • 50 grams of sugar (adjust the amount depending on the type of apple)
    • 5 grams of lemon zest.

    Whipped whites:

    • 10 grams vanilla sugar
    • 50 grams of sugar
    • Three squirrels
    • 5 grams lemon juice
    • Salt - a pinch.

    Recipe:

    Let's prepare the dough. To do this, combine butter, sugar, salt, vanilla sugar, yolks and beat everything together. Vanilla sugar serves as a flavoring and overpowers the taste of the yolks in finished baked goods. Mix flour with baking powder, add to other products and knead the dough. After that, we wrap it in a bag and put it in the refrigerator while preparing the remaining products.

    Now take the apples, peel them, remove the core, grate them coarsely and mix with lemon zest and sugar. Place the apples in a suitable container, put them on the fire and cook them for 15-20 minutes, stirring constantly. The result should be applesauce. Add sugar according to your taste. The puree must cool completely. To make it faster, place the container with fruit puree in cold water.

    After this, combine the whites, salt, lemon juice and beat until foamy. Add sugar and vanilla sugar gradually, continuing to beat until stiff peaks form.

    Line the pan in which the cake will be baked with parchment paper. This applies to both days and sides. Divide the dough into two parts - 2/3 and 1/3.

    First, roll out most of the dough into a layer that matches the diameter of the mold.

    I note that the base can be pre-baked for 10 minutes. This, of course, is not necessary, but then we increase the baking time of the pie itself a little so that the pie can bake sufficiently, since the applesauce itself is moist.

    Place the filling on the base, followed by the protein mass, and rub the rest of the dough on top.

    Oven temperature – 180 degrees, cooking time – 35 – 45 minutes. If the top of the pie begins to darken quickly, cover it with foil.

    Before using, the cake must cool completely. Don't worry if it shrinks a little, that's how it should be.
