Our apple pie with kefir consists of: apples, eggs, sugar, salt, kefir, flour and soda.

You can prepare apples either first or second - it all depends on your aesthetic perception. The fact is that if you prepare the apples first, and only then prepare the dough, there is a possibility that the apples may darken while preparing the dough. The darkening is due to the fact that apples contain iron, which begins to oxidize in air.

This process (oxidation) doesn’t bother me, so I prepare the apples first.

The fruits should be washed well with water. Then take each apple, cut it into 4 parts and cut out the core.

Next, cut each quarter into pieces of arbitrary shape.

To prevent my pieces from darkening too much, I cover them with another plate on top.

Prepare the dough.

When preparing batter, I often resort to using a mixer, which makes my work much easier. My mixer consists of a rotating bowl and whisks, all I have to do is add the ingredients, and my assistant does the rest of the work.

So, put the eggs in the mixer bowl and mix them lightly. Next comes sugar and kefir. Beat the mixture again for 2 minutes.

Lastly add: salt, soda and flour. There is no need to extinguish the soda, because... it will react with kefir. I don't beat the flour with a mixer. It needs to be sifted, added in small portions (2 tablespoons each) and mixed with a whisk.

As you can see in the photo, I immediately pour the flour into a strainer and immediately sift it into the dough.

In the end result, we should end up with a pouring mass like this. There is no need to make grounds, because... our apples will not be able to soak it well enough.

Add chopped apples to the finished dough. As you can see in the photo, my apples did not oxidize much. Now the contents of the bowl need to be mixed well.

Place the apples and dough into the mold. I didn’t grease my mold with butter or sprinkle it with breadcrumbs - I relied on a silicone mold. But as practice has shown, when removing the pie from the mold, it was the sprinkles that were picked up, because... the product turned out wet and was difficult to remove even from this mold.

So don't repeat my mistake, but grease the pan with butter and sprinkle with breadcrumbs.

Place the pan with the semi-finished product in a preheated oven and bake for 35 minutes at a temperature of 200 degrees.

If the starting product is fresh milk, you must add starter to it - a little fermented baked milk, sour cream, ready-made dry fermented milk starter. To obtain about 1 kg of product you will need:

  • about 3 liters of milk. It is better to take undiluted farm grade; the store-bought product will yield slightly less product;
  • sourdough at the rate of 4 tablespoons per liter of original product. This is the minimum amount required to ferment the main ingredient.

Cooking time: 2 hours 30 minutes.

In a deep bowl, beat eggs and sugar until foamy. It is not necessary to use a mixer for this; a whisk will do just fine - the kefir pie rises perfectly anyway.

Now, pour in the main ingredient - kefir (which should be taken out of the refrigerator in advance and kept at room temperature or heated on the stove), and add vegetable oil to it. Mix everything.

Dry ingredients, namely: wheat flour, baking powder and vanillin, must be mixed in a separate bowl. This guarantees us the homogeneity of the mixture, namely that the baking powder will be evenly distributed over the surface of the future dough.

Carefully combine both mixtures. Do not beat the dough with a mixer! Add nuts or raisins (or any other filling you choose) to the finished dough. If you use nuts, it is better to lightly toast them or warm them in the microwave. Only after this will you get a pronounced nutty aroma.

Raisins, on the contrary, need to be washed and dried, placed on a napkin or towel in a thin layer, then rolled in flour.


The multicooker pan must be greased with vegetable oil, then pour the dough into it. Set the mode to "baking". In a Panasonic multicooker, the cooking time is 60+40 minutes (100 minutes in total).
