- Then add 2 tsp to the mixing container. sugar, 1 tsp. salt and 1 tbsp. l. olive oil.
- Next, you need to pour a glass of water into the preparation.
- The entire contents of the container must be thoroughly stirred with a spoon or wooden spatula. The mixture may seem runny at first, but will thicken with careful stirring. You need to mix the dough until all the lumps of flour soften and the workpiece turns into a homogeneous mass. The finished dough should stick slightly to your hands and be moist.
- As soon as the lump of text is ready, the surface of the table or cutting board must be covered with a thin layer of flour. Then you need to place the dough on top of it and start kneading it vigorously for 5-10 minutes. Knead the lump of dough until completely homogeneous.

- Then coat the surface of the pan with a thin layer of olive oil and heat over low heat.
- Pour the peeled shrimp shells into a heated frying pan and fry over low heat for 5-10 minutes. stirring occasionally. The shells should become crumbly and crispy. The heat and the juices released from the shells will transform the oil into the shrimp gravy needed to enhance the flavor.
- After preparing the shells, the carcass of each shrimp must be ripped open and carefully gutted without damaging the meat. Large shrimp almost always have giblets inside, which can ruin the taste of the pizza. They must be removed, and the shrimp carcass itself must be thoroughly rinsed under cold water.
- Carefully pour the shrimp oil from the frying pan into a separate container and discard the stewed shells.
- Next, the garlic cloves must be peeled and finely chopped into thin rings on a cutting board.
- Then you need to pour the shrimp oil into the frying pan and carefully cover the entire surface with it.
- Pour the garlic onto the heated surface of the frying pan and fry over medium heat for 3-5 minutes. until softened.
- After cooking, the oil in which the garlic was stewed must be poured into a separate container, and the garlic should be poured onto another plate.
- In a bowl with oil soaked in garlic and shrimp, add 2-3 tbsp. l. curd cheese to obtain the sauce, and then the workpiece should be thoroughly stirred.
Assembling the ingredients
All prepared ingredients must be collected in the correct sequence and proportions.

- The dough must be placed on the surface and rolled out to a flattened circle. While rolling tightly, periodically stretch along the edges and sprinkle with flour.
- Then the dough must be carefully placed on a baking sheet, a round spatula or any other wide baking surface.

- Then you need to add yeast to the flour.
- Afterwards, add 2 tsp of sugar to the ingredients. and 1 tsp. salt.
- Next, you need to pour 1 tbsp into the workpiece. l. olive oil and a glass of water. Before this, the water must first be brought to boiling temperature and allowed to cool for 10-15 minutes.
- You need to knead the dough for 15-20 minutes. using a mixer or by hand. When kneading by hand, the dough must be pressed in a pan and kneaded until it turns into a thick, homogeneous mass.
- Next, you need to take a clean mixing container, pour olive oil into it and carefully lubricate the bottom and walls with it.
- Place the dough inside the container, grease it with olive oil. After this, the dough piece should be covered with a lid or cling film and left to rise for 30 minutes.
- While the dough is rising, you need to make shrimp. If the shrimp are frozen, they should be thawed and washed thoroughly, and then placed in a container with water to soak.

- Then you need to peel the garlic and cut the cloves into small rings. Garlic should not be coarsely chopped, but it should also not be crushed into porridge, otherwise it will take away the taste.
- The surface of the pan should be coated with olive oil and heated over low heat.
- Pour the shrimp shells into a heated frying pan and fry over medium heat for 3-4 minutes. until they become crispy.
- After this, the oil in which the shells were fried must be drained from the frying pan into a separate bowl and strained through a sieve.
- Then the resulting shrimp oil must be returned to the frying pan, add garlic to it and fry until light golden brown over medium heat for 3-4 minutes.
- After cooking the garlic, the oil must also be drained from the frying pan into a separate container, straining through a sieve.
- Add 200 g of mascarone cheese to a bowl with butter and mix thoroughly with a spoon or a special spatula until thick. If necessary, the workpiece can be salted.
Assembling the ingredients
Once the dough has risen, you can start shaping the pizza:
- To roll out the dough, place it on a table or cutting board that has been previously sprinkled with a thin layer of flour.
- Then you need to gently press the lump of dough with your hands on all sides to give it an even shape, then flatten it and roll it out to the size of the surface of the frying pan. To create the desired shape, you can turn the pan over, attach it to the dough and press it with the sides. Then the dough needs to be cut along the contour, forming an even circle.
- Before placing the workpiece, the bottom of the pan must be well greased with olive oil so that the dough from below does not burn.
- Then the dough should be carefully placed on the surface of the frying pan, evenly distributed over the area so that it does not wrinkle anywhere. Everywhere in the dough you need to straighten out all the folds.
- Then the surface of the dough must be carefully greased with the previously prepared cheese and shrimp sauce.
- On top of the spread layer you need to sprinkle Parmesan cheese, grated on a coarse grater, along with fried garlic.
- Next, distribute the shrimp evenly along the entire surface of the pizza.
- Pizza should be cooked over low heat for 7-10 minutes. under a closed lid. The ingredients must not be turned over; they must be baked in their own juices and on a layer of butter until cooked and without burning.
The cheese will quickly melt, saturate all layers of dough and moisten the pizza, allowing it to bake longer and better, and not burn.
Shrimp pizza (red)
Red pizza means that it is prepared using red or tomato sauce. There is also white pizza with shrimp. But today with tomato sauce. I rolled out the dough for this pizza very thin. In our family, we like thin pizza better. The exception is pizza with stuffing, the so-called “stuffed”.
From the given amount of ingredients, you get two large thin pizzas, about 35 cm in size. If you want to make one pizza (thin), take half the ingredients for the dough or, which I think is better, pack the other half of the dough in a freezer bag or container and put it in freezer. You can use it to make pizza, flat bread or focaccia. I like to use large shrimp for pizza, as small ones can dry out at high baking temperatures. You take a bite of pizza, the juicy shrimp breaks, the cheese stretches, the dough crunches, mixing with tomato sauce and vegetables... What else do you need?
Ingredients
Dough for two thin large pizzas:
- 400 g flour
- 2 tsp dry yeast
- ¾ tsp salt
- 2 tbsp. olive oil
- 250 ml warm water
- A little flour for rolling out the dough
- Cornmeal for dusting the baking sheet
Filling:
- ¾ -1 cup of pizza sauce (if the sauce is smooth, use ¾
, if in pieces, 1 cup or to taste) - 200-250 g grated mozzarella cheese
- 1 medium sweet pepper, cut into strips or slices
- ½ small onion, cut into strips or slices (preferably sweet or red)

- 18-22 large raw shrimp, peeled

Preparation:
Prepare the dough.
Stir yeast in warm water. Add salt and yeast solution to the flour. Knead the dough using a mixer or by hand. Add oil. Stir.
Let the dough rest for about 45 minutes, covering it with cling film or a towel. The dough should rise well.
On a lightly floured surface, roll out half the dough into a circle measuring 33-35cm.
Sprinkle the baking sheet with cornmeal (if you don't have cornmeal, you can use semolina, ground crackers or wheat flour). Transfer the dough circle to a baking sheet.
Preheat the oven to 230-250 C (450-475 F).
Brush the dough base with tomato sauce, leaving the edges free.
Place cheese on the sauce, then bell pepper, chili pepper and onion.
Sprinkle with garlic.
Place shrimp, lightly salted and sprinkled with black pepper.
Bake the pizza for about 15 minutes until the dough is lightly browned and the shrimp are pink. ready.
