How to make chicken stroganoff

To prepare beef stroganoff from chicken, or rather from chicken breast, you need to cut the chicken breast into thin strips. Peel the carrots, onions and garlic. Grate the carrots, chop the onion, and chop the garlic with a knife. In a deep frying pan with the addition of sunflower oil, fry the onions and carrots. Add chopped chicken breast to them, add seasoning, salt and fry everything together. Prepare gravy from flour, cream and tomato paste. Pour it over the beef stroganoff and simmer until done. Add garlic at the end.

I will prepare beef stroganoff from chicken breast, which I had left over from preparing the previous chicken dish. I cooked baked chicken and cut off the breast because it turned out a little dry. And for goulash, minced meat or for today's dish, breast is very suitable. I kept the breast in the freezer, I put it in the refrigerator in the evening and left it to defrost until the morning.

So, in the morning I take the defrosted chicken breast out of the refrigerator, rinse it under running water and remove the remaining skin from it. After this, I dry the breast with a paper towel, removing excess moisture from it.

I cut the prepared breast across the grain into strips, approximately four to five centimeters long and a centimeter to one and a half centimeters wide.

I've sorted out the breast, now I'm moving on to the vegetables. I peel carrots, onions and garlic. I wash them under running water.

I grate the carrots on a coarse grater.

I cut the onion lengthwise into four parts, and then crosswise into thin strips. You can, of course, cut the onion into small cubes, it’s at your discretion.

There's some garlic left. I chop it finely with a knife on a cutting board, this way it retains more flavor and aroma than passing it through a garlic press.

I have all the ingredients prepared. I put a deep frying pan with a thick bottom on the fire (such a frying pan is best suited, since later the beef stroganoff will need to be simmered, and it will not burn to the bottom), pour four tablespoons of sunflower oil into the frying pan.

When the frying pan with oil is well heated, put grated carrots and chopped onions in it.

I fry everything over low heat for about two to three minutes, stirring so that the vegetables do not burn.

Then I add chopped chicken breast to the pre-fried vegetables.

After mixing the breast with onions and carrots, I fry everything together for about three to four minutes.

In order not to waste time while the breast with vegetables is fried, I prepare the gravy.

I take a small bowl and pour a tablespoon of flour into it.

I add about 50 - 70 ml of cream to the flour and mix well so that there are no lumps. Cream can be replaced with milk. But if you don’t like dairy products, then you can use plain water.

Add a tablespoon of tomato paste to the resulting mixture. If you don't have tomato paste, you can use tomato sauce instead. You can take two to three tablespoons of sauce.

I mix everything, adding the remaining cream as I go.

The gravy is ready.

During this time, the chicken breast with carrots and onions were fried. I sprinkle them with chicken seasoning, dry adjika and salt (although you can just use ground black pepper).

After this, I pour the prepared gravy into the frying pan with the chicken breast and seasonings and mix everything.

Cover the frying pan with a lid and simmer the beef stroganoff over low heat for 15 minutes. About two or three minutes before the end of cooking, I open the lid and add finely chopped garlic so that it releases its aroma. Lightly stir the beef stroganoff and cover again.

After the time has passed, remove the frying pan from the heat.

Cooking step by step

  1. We prepare the chicken breast, remove the skin from it and cut out the frame. We are left with clean fillets. We cut it into small pieces.

  2. Chopped chicken pieces need to be breaded in flour. We will do this in an unconventional way. Pour flour, about a third of a glass, 5 g of salt and paprika to taste into a plastic bag. Add chicken pieces to the contents of the bag, close the bag and mix, leave to marinate for a while.

  3. Cut 1 large onion randomly, into cubes or strips, depending on how you will cut all the components.

  4. Slice the mushrooms. In this case, we have 200-250 g of champignons.

  5. Heat the frying pan, grease it with 1 tbsp. l. sunflower oil, add 50 g butter.

  6. Place onions and mushrooms in hot oil and fry. The onion should become transparent. Place the prepared mushrooms on a plate.

  7. Add 50 g of any vegetable oil to the frying pan, heat it up and pour the chicken out of the bag. Fry over high heat until browned. Place the finished meat on a separate plate.

  8. And in between times, we boil water and prepare any favorite pasta or noodles.

  9. Let's return to the frying pan. Add the remaining butter and flour and fry for one minute, stirring while doing so.

  10. In the process, add 15 g of mustard beans, half a glass of broth, and bring to a boil.

  11. Place the chicken, onions and mushrooms into the boiling mass, mix everything and reduce the heat.

  12. Add 125 g of sour cream and 50-60 g of unsweetened yogurt.

  13. Bring to readiness under the lid for 10 minutes.
