It is believed that it is impossible to prepare such a sweet on your own, since the recipe requires special ingredients. But skillful housewives claim the opposite, replacing exquisite products with the most similar ingredients.

Particular difficulty arises when baking biscuits for tiramisu, which should replace savoiardi cookies. If the recipe does not correspond to the general concept of the dessert, then the taste of the sweetness will not even approximately correspond to the original.

If you choose the ingredients and successfully implement the recipe, then the sponge cake for tiramisu at home will turn out perfect. The base will be successfully combined with cream, alcohol and powders.

Ingredients needed to make a unique biscuit

The classic recipe assumes the presence of a certain type of cookie, which can be bought in the store. But it’s better to prepare the base for the dessert yourself. The tiramisu sponge cake recipe, according to which you can bake savoiardi cookies, requires the presence of the following products:

  • 4 yolks and 4 whites.
  • 200 g sugar.
  • A glass of flour.
  • A teaspoon of baking powder.

Sometimes a small amount of rum or liqueur is added. Additionally, you will need a small piece of butter and baking paper. Before you start cooking, you should turn on the oven so that it warms up well.

This cake needs to be kept in the refrigerator for several hours so that it hardens and sets properly. Let's find out today how to prepare cream for Tiramisu.

This cream is perfect not only for soaking a cake, but it can also be served with casseroles, pancakes or cheesecakes. It goes amazingly with fresh berries and grated chocolate chips.

Ingredients:

  • espresso coffee – 50 ml;
  • granulated sugar – 150 g;
  • cream – 300 ml;
  • cottage cheese – 250 g;
  • chicken egg – 4 pcs.

Preparation

So, put the cottage cheese in the bowl of a food processor, pour in the cream and add 50 grams of sugar. Grind everything until completely homogeneous. Now separate the yolks from the whites. We only need yolks in this recipe. Combine them with cold coffee and the remaining granulated sugar. Using a whisk, lightly beat everything until smooth and place it on very low heat. Stirring constantly, bring the mixture to 85 degrees, but do not boil. As soon as the mass thickens, carefully place it in the curd mixture and grind everything again to a homogeneous consistency. Well, that’s all, the curd cream for Tiramisu is ready!

Cream for Tiramisu with mascarpone

Ingredients:

  • chicken egg – 4 pcs.;
  • powdered sugar – 100g;
  • mascarpone cheese – 500 g;
  • gelatin – 10 g.

Preparation

Take 4 chicken eggs, carefully separate the white from the yolk. Now combine the powdered sugar with the yolks and mix thoroughly with a whisk until a thick foam forms. After this, add the mascarpone cheese and mix thoroughly with a spoon until smooth. Then carefully add the protein to give our cream some airiness. Mix everything again with a spatula and put the finished cream in the refrigerator for a while to harden.

Cream for Tiramisu without eggs

Ingredients:

  • cream – 200 ml;
  • mascarpone cheese – 500 g;
  • powdered sugar – 100 g;
  • vanillin - optional.

Preparation

Take well-chilled cream with 33% fat content and pour it into a deep bowl. Next, gradually add powdered sugar and beat the mixture thoroughly until soft peaks form. After this, add mascarpone cheese in small portions and carefully fold it into the whipped cream from top to bottom. If desired, add vanillin to the cream and knead again until smooth.

Cream for Tiramisu with cherry liqueur

Ingredients:

  • mascarpone cheese – 500 g;
  • granulated sugar - 2 tbsp. spoons;
  • vanilla pulp - 1 tbsp. spoon;
  • cherry liqueur – 1 tbsp. spoon.

Let's consider another option on how to prepare cream for Tiramisu. Place mascarpone cheese in a bowl, add granulated sugar, add vanilla pulp and beat everything with a mixer, gradually pouring in cherry liqueur.

Classic cream for Tiramisu

Ingredients:

  • mascarpone cheese – 500 g;
  • chicken egg – 5 pcs.;
  • granulated sugar – 100 g;
  • orange syrup - 3 tbsp. spoons;
  • lemon – 1 pc.

Preparation

Carefully separate the whites from the yolks and beat the first into a fluffy mass, gradually adding a little sugar. Grind the yolks separately with the remaining granulated sugar, add the juice of a whole lemon and pour in the orange syrup. Mix everything well and carefully add mascarpone cheese to the mixture. After this, add the previously whipped whites to the cream and lightly beat everything until smooth.

Cream for Tiramisu with condensed milk

Ingredients:

  • mascarpone cheese – 200 g;
  • cream – 150 ml;
  • condensed milk – 50 ml;
  • sugar – 1 tbsp. spoon.

Preparation

Beat the chilled cream with a mixer until a thick foam forms. Separately combine curd cheese, granulated sugar and condensed milk. Then we carefully combine both masses and put the finished cream in the refrigerator.

The principle of preparing the base for tiramisu

To understand how to make a tiramisu sponge cake, you don’t need to have any special skills or knowledge, just follow a simple recipe:

  1. You need to divide the sugar in half. Beat the first part with the whites, and the second with the yolks. In the first case, you should get a stable white foam. In the second, the mass should increase 2-3 times.
  2. Mix the egg white and yolk mixtures until completely homogeneous.
  3. Flour must be mixed with baking powder.
  4. Gradually add flour to the mixture of eggs and sugar. Mix all components thoroughly.
  5. Using a pastry bag, squeeze small strips onto baking paper that has been previously greased with butter.

Bake the strips for about 7-8 minutes. After cooking, you should let the cookies cool, and only then you can remove the homemade savoiardi from the paper.

Homemade Tiramisu cake

Airy and delicate in taste, created based on the classic Italian dessert - Tiramisu cake, a recipe with photos step by step at home will explain in detail the process of its preparation.

Ingredients:

for biscuit:

  • 6 chicken eggs,
  • 13 tbsp Sahara,
  • 5 tbsp. flour,
  • 1 tsp vanilla sugar,
  • 1 tsp baking powder,
  • 500 gr. mascarpone cheese,
  • 14 tbsp 30% cream,
  • cocoa - 1 tbsp,
  • 3 tbsp. powdered sugar.

  • 4 tbsp. heavy cream,
  • 2 bars of dark chocolate,
  • 1 tbsp. butter.

for soaking the biscuit:

  • 2 tsp ground coffee,
  • ½ cup boiling water
  • Amaretto liqueur to taste.

Step-by-step preparation:

Step 1. Using a mixer, beat the eggs with sugar and vanilla until the white crystals are completely dissolved. The mixture should double in size.

Step 2. Sift the flour and add baking powder into it. Mix the flour into the egg-sugar mixture.

Step 3. Take a baking container with a diameter of 20 cm. Place a pre-cut circle of parchment paper on the bottom of the pan. Divide the dough in half. Add cocoa to the second part so that we get a dark cake. We transfer one part into a mold and place it in a preheated oven. The biscuit is baked at 180ºC for approximately 25 minutes, depending on the power of the oven. Check the readiness of the baked goods with a wooden skewer. Cool the cake on an iron rack.

We carry out the same manipulations with the second part of the test.

Step 4. Prepare the cream. Whip the cream with a mixer. Combine cream cheese with powdered sugar. Combine whipped cream with mascarpone.

Step 5. Brew natural coffee, pour a little liqueur into it.

Step 6. Cut one of the sponge cakes, for example, the one above the previous one, into two parts and soak it in coffee. We also pour the remaining uncut sponge cake with coffee and liqueur impregnation.

Step 7. Assemble the cake in a split frame. Divide the cream into 3 parts. We coat each layer of sponge cake with cream cheese cream. The rest of the cream is needed for the final decoration of the top of the cake.

Step 8. To decorate the side surface of the dessert, prepare ganache. Heat the cream until hot. Pour them into a bowl with chocolate pieces, mix the ingredients until smooth. At the end add oil. Place the cream in the refrigerator. Beat the cooled cream with a mixer until it reaches a mousse-like consistency.

Step 9. Decorate the cake. We remove the frame. We grease the sides of the dessert with whipped chocolate cream, and decorate its surface with the remaining cream cheese cream from a pastry bag and sprinkle with a thin layer of cocoa powder. Place the cake in the refrigerator to soak for several hours.

Place a portioned piece of cake on a snow-white plate and serve with hot coffee.

An original dessert that will be an ideal decoration for a festive table can be a Tiramisu cake. Preparing the delicacy is not difficult, since the base requires the most affordable products. The sponge cake for Tiramisu cake can be prepared from the following products:

  • 6 eggs.
  • A glass of sugar.
  • Half a cup and 3 tablespoons of flour.
  • A packet of vanilla sugar.
  • A packet of baking powder for dough.

Additional ingredients can disrupt the recipe of the entire dessert, so you should use only the declared ingredients.

How to properly prepare pastry base

Biscuits for tiramisu in the form of a cake can be prepared in accordance with a simple recipe that will not fail:

  1. Using a mixer, beat the eggs with sugar. There is no need to separate the whites from the yolks. In the last minutes add vanilla sugar.
  2. Flour must be mixed with baking powder.
  3. Carefully mix the egg mixture with flour. Beat the consistency further with a blender for 10 minutes at medium speed. At the end the consistency should be dotted with air bubbles. The more bubbles, the better the sponge cake will rise.
  4. Prepare a baking pan, since the cake uses a whole sponge cake and not individual savoiardi-type cookies.
  5. Cut out baking paper according to the shape of the bottom, which it is advisable to grease at least a little with butter.
  6. Pour the prepared mixture into a baking container. Place in preheated oven.
  7. Bake the biscuit at 180 degrees for half an hour. After this, remove the cake from the mold and place on a wire rack to cool.
  8. After cooling, use a thread to cut the cake lengthwise. This will result in two biscuits, which will then need to be soaked.

If the cake rises significantly during baking, you can cut the sponge cake into 3 or even 4 parts. After this, creams and impregnations are made, which will be used to lubricate the flour products.

Tiramisu Recipes

So, let's move on to the most cherished part, the recipes. Today we will discuss four recipes at once:

  • classical,
  • instant cooking,
  • with orange and chocolate,
  • with lemon zest and limoncello.

In Jamie Oliver's book “My Italy,” which I took as the basis for my special project “In the Footsteps of Jamie Oliver,” there was a recipe for instant Tiramisu, which pushed me to look for a more classic version and something even more interesting.

First, I will give the recipes themselves, and at the very end I will write some tips, recommendations and thoughts on the topic of preparing Tiramisu and choosing ingredients.

Classic Tiramisu Recipe

I started looking for a recipe for classic Tiramisu after I heard in some Jamie Oliver video that the original recipe did not use egg whites. I found this recipe from Gennaro Contaldo, a friend of Jamie Oliver.

Cooking time: 15 minutes

Ingredients:

  • Savoyardi cookies – 12-24 pcs.
  • Mascarpone cheese – 250 gr
  • Cream 33-35% – 250 ml
  • Yolk - 1 pc.
  • Sugar - 2 tbsp.
  • Vanilla - seeds 1/2 pod or 2 tsp. extract
  • Espresso – 180 ml
  • Kahlua liqueur - 2 tbsp.
  • Cocoa powder - for decoration

Instant tiramisu (Tiramisu veloce)

I took this recipe from the book “My Italy” by Jamie Oliver.

Cooking time: 10 minutes

Ingredients:

  • Savoyardi cookies – 12-24 pcs.
  • Espresso – 250 ml
  • Sugar - 4 tbsp.
  • Mascarpone cheese – 500 gr
  • Vanilla - 2 pods
  • Sweet wine “Vin Santo” or Sherry – 140 ml
  • Zest and juice of 1 orange
  • Dark chocolate 70% – 100 g

Cooking method:

  1. Mix sugar and espresso. Pour this over the cookies.
  2. Prepare the cream: beat the Mascarpone with vanilla until smooth, slowly pouring in the sweet wine or sherry. Add orange juice (if the cream seems runny, the juice can be added to the cookies rather than to the cream)
  3. Collect dessert. Place a layer of cream on the cookie layer. Repeat this until the end of the form.
  4. Garnish the dessert with orange zest, coffee bean shards and chocolate shavings.

Tiramisu with orange and chocolate

I came across this recipe when I was looking for interesting recipes for this dessert and wondering what kind to make. Jamie Oliver cooks it right on the canal bank in Venice.

Cooking time: 20 minutes

Ingredients:

  • Savoyardi cookies – 12-24 pcs.
  • Espresso – 200 ml
  • Dark chocolate – 100 g +30 g (for decoration)
  • Butter - 50 g
  • Mascarpone cheese – 250 gr
  • Eggs - 6 pcs
  • Salt - a pinch
  • Sugar - 150 gr
  • Orange – 1 piece
  • Sweet wine – 100ml

Cooking method:

  1. Mix espresso and sweet wine.
  2. Melt the chocolate in a water bath or in the microwave and add a spoonful of butter (50g).
  3. Prepare the cream:
      separate the yolks from the whites;
  4. beat the yolks together with sugar;
  5. add Mascarpone cheese to the yolks. Beat until soft;
  6. beat the whites with a pinch of salt to soft peaks and slowly, in several approaches, add them to the mixture of yolks and cheese;
  7. add orange zest to the cream.
  8. Assemble dessert:
      Dip Savoyardi cookies in hot, fresh coffee and place in the mold;
  9. pour melted chocolate over cookies;
  10. pour a portion of cream.
  11. Repeat this until you run out of ingredients or mold!
  12. Decorate the finished dessert with chocolate chips and orange zest.

Lemon Tiramisu with Limoncello

This is the perfect recipe for those who love lemon desserts in any form. I am one of those people, so I approached this recipe with incredible enthusiasm. And my hopes were not disappointed. This recipe was just sweet enough but not too sweet, lemony, with a strong Limoncello flavor without being overly alcoholic.

Cooking time: 20 minutes

Ingredients:

  • Savoyardi cookies – 12-24 pcs.
  • Syrup for soaking cookies: sugar - 250 g;
  • water - 250 g;
  • juice and zest of 2 lemons.
  • Cream:
      eggs - 4 pcs;
  • sugar - 150g;
  • salt - a pinch;
  • Mascarpone cheese - 500 gr;
  • zest of 1 lemon;
  • Limoncello - 4 tbsp.
  • Limoncello for soaking the cakes - optional, from 3 tbsp.
  • Chocolate chips, lemon zest and mint for garnish
