It just so happens that everyone’s favorite New Year holiday falls during the Nativity Fast. Does this mean that the holiday is canceled for everyone who fasts? Not at all. You are surprised: how to prepare a New Year's, festive table during the Nativity Fast? Indeed, if you are fasting for the first time in your life, it may be completely unclear how to fully celebrate the holiday and not break the fast. After all, the New Year is a kind of tradition that is hard to give up!

It is clear that Orthodox fasting, if you take it seriously, is not at all something that can be neglected. How to be? Meanwhile, many Orthodox people every year find a worthy way out of this situation, and it is very simple: prepare delicious Lenten dishes.

New Year's Lenten dish “Baked peppers”

What do you need:

  • Sweet bell pepper – 2 pieces
  • Tomatoes – 2 pieces
  • Pitted olives
  • Garlic – 2 cloves
  • Greenery
  • Pepper
  • Salt

How to cook:

Peel the pepper and cut in half. Boil the tomatoes for one minute, remove the skin and chop finely. Chop the remaining ingredients the same way. Season everything with pepper, pour over vegetable oil. Place in the oven for 45 minutes at 180 degrees.

New Year for many is a “salad” holiday. And on the Lenten table the salad will be appropriate.

Salad with octopus and squid

What do you need:

  • Octopus and squid – 250 g each
  • Tomatoes – 3 pcs.
  • Green onions
  • Green olives – 100 g
  • Capers (salted buds) - 2 tbsp. l.

For refueling:

  • Olive oil
  • Lemon juice
  • Salt
  • Pepper

How to cook:

  1. Boil the octopus and squid in salted water for 50 minutes, after cleaning them. Then dry and finely chop.
  2. Chop all other ingredients and mix.
  3. In a separate bowl, prepare the dressing, mix 4 tablespoons juice, 3 tablespoons olive oil, salt and pepper.
  4. Then mix with the main mass.

The salad is ready to serve.

Lenten delicious New Year: Let's set the table with pleasure, celebrate - with benefit!

For all those who are fasting during the Nativity Fast, which continues until January 7, I immediately want to offer ideas and recipes for delicious and easy-to-prepare dishes, for the preparation of which you don’t even need to run to the store, since all the necessary ingredients are available in the home of every resident of Russia. Today we will need regular potatoes, rice, pantry and freezer supplies, and any vegetables and root vegetables we have in the house.

And for those who are interested in why vegetarian, vegan and Lenten tables are gaining enormous popularity in the countries of Asia, the East, America and Europe in the age of severe climate change and against the background of cut down and burnt forests of Siberia and Brazil, I will explain briefly: the more and more often we We eat food of plant rather than animal origin, the easier it is for us and the planet itself to breathe. Therefore, on many tables today, in principle, only lenten and vegetarian dishes will be served.

So let's immediately take out and peel the potatoes to quickly prepare the first beautiful side dishes for the New Year's table.

Italian New Year's potatoes

Method: cut the peeled potatoes into thin rings. Quickly boil them in boiling salted water until half cooked. Place on a towel to remove excess liquid and blot. Salt and pepper each ring. Sprinkle with dry Italian spices. We coat each one with olive oil and assemble it into beautiful portioned forms. Bake on a baking sheet with baking paper greased with vegetable oil in an oven preheated to 200-220°C until browned. Before serving, sprinkle with herbs and lean (for example, soy) grated cheese.

American "hedgehogs"

Method: cut the unpeeled, but washed and dried potatoes with a sharp knife, not reaching about 5 mm to the bottom. The smaller the distance between the “rings”, the faster it will cook and the crispier it will be.

Coat the potatoes with vegetable oil so that it penetrates into the cuts. Season generously with salt and pepper. Sprinkle with ground sweet pepper and dry spices: dill, parsley, basil. Bake for 40-50 minutes, covered with foil, at a temperature of 220°C and then another 15-20 minutes without foil at a temperature of 240-250°C.

New Year's potatoes in French

French potato dishes cannot do without garlic, butter and cream, which for the Lenten version are replaced with soy products, and butter with margarine.

Method: to speed up the preparation, also pre-boil the potato rings until half cooked. We take a fireproof dish, which we grease with vegetable oil and a piece of margarine. We lay a nice even layer of potatoes, which we salt, pepper, and sprinkle with grated or squeezed garlic. Sprinkle with Provençal mixture of dry herbs or homemade dry spices. Add a couple of spoons of either soy milk product, or coconut milk, or small pieces of margarine, or coat with fragrant olive oil and again lay out a layer of potatoes. We repeat the procedure.

Bake in an oven preheated to 200-220°C until browned. Let it cool a little and carefully turn it over, like a pie, onto a plate in which we place the dish on the table.

Spanish patatas bravas ("brave potato")

A dish for those who like it hot! Potatoes can be cut into quarters or small cubes, as they do in Spain itself.

Chop the potatoes into a bowl and marinate generously in dry sweet paprika, smoked paprika, chilli, salt and olive oil. Stir and let sit for 10 minutes. Fry in a hot cast iron frying pan or bake in the oven on a baking sheet.

Ingredients for the “brave sauce”: 1/3 cup olive oil, 2 tsp. dry smoked paprika, 1 tsp. sweet paprika, 1/2 tsp. hot red pepper, 1 tbsp. l. flour, 1 cup vegetable broth (based on cubes), 1-2 tbsp. l. tomato puree, salt and black pepper to taste.

Method: heat olive oil in a saucepan, first add all the dry spices to release the aroma, and then add flour. We begin to introduce the broth in a thin stream, whisking the mass with a whisk. As soon as the consistency becomes uniform, add tomato puree, paste or even ketchup. Salt and pepper to taste. Let cool slightly and serve with Spanish “brave potatoes”!

Indian vegetarian pilaf

There is always rice in the house of each of us, and not a single Asian or Oriental New Year's table can do without it.

Ingredients: 1.5 cups Basmati rice, 2 tbsp. l. vegetable oil, 1 onion, 2 green chili peppers (optional), 1.5 cups of vegetable and legume mixture: finely chopped carrots, potatoes or mushrooms, as well as peas and canned beans; 3 tbsp. l. mint or cilantro, 1 tsp. dry ginger and garlic, about 2-2.5 cups of water, salt, pepper.

For the base of the pilaf, the aromatic fragrant oil in which it will be cooked: 1 bay leaf, 1 star anise, 6 cloves, 4 cardamom seeds, 1/2 tsp. cumin and fennel seeds, 1 tsp. cumin, coriander or cumin, 1 cinnamon stick.

Method: heat vegetable oil in a wok or cauldron, into which immediately add all the dry spices and herbs. As soon as they release their aroma, add finely chopped onions and a mixture of vegetables with dry ginger and garlic. Fry, then add rice, water, peas and legumes. We prepare it like regular pilaf. At the end, sprinkle with herbs and ground nutmeg.

Oriental baked eggplants or zucchini

Method: cut eggplants or zucchini in half, brush with olive oil and grill on the cut side in a grooved frying pan. Remove and generously sprinkle with garlic, chopped sweet bell peppers and tomatoes. Salt, pepper, add any oriental spices or dry seasonings and place in an oven preheated to 180-200°C on a greased baking sheet. Sprinkle the prepared vegetables with olive oil, lemon juice and sprinkle with herbs.

If you have any frozen dough in the house or want to quickly prepare it, then with seasonal vegetables from the pantry you can make a simple

European New Year's pie with vegetables.

Ingredients for quick dough: 1.25 cups (160 g) flour, 1/2 tsp. salt, from 0.5 to 1.5 tsp. sugar (if you like the dough sweeter), 110 g cold margarine, 3-4 tbsp. l. ice water.

Method: cut the margarine into cubes and mix with flour, gradually adding the remaining ingredients. Knead well, cover with film and put in the refrigerator for half an hour.

Roll out the finished dough, place it on a baking dish with sides coated with margarine, pierce it with a fork around the perimeter and bake in an oven preheated to 180°C until ready (30-40 minutes depending on the size of the mold and the thickness of the dough). Let the base cool and make the filling, for which we cut and sauté any vegetables available in the house in vegetable oil with the addition of spices.

Let the filling cool, put it in the finished dough and bake in an oven preheated to 200°C for another 10-15 minutes, sprinkled with soy cheese or sour cream if desired.

If you have pumpkin in the house, you can use it to make classic American pies.

And, of course, what would a New Year’s table be without dessert! But it may require a quick trip to the store.

New Year's Coconut Macaroons

Ingredients: 2 cups unsweetened coconut, 1 cup almond or coconut milk, 4 tbsp. l. brown or white sugar, 1 tbsp. l. coconut flour and 1 tbsp. l. almond flour (or 2 tbsp almond flour), 1 tsp. vanilla extract.

Method: Preheat oven to 350°. Line a baking tray with baking paper. In a non-stick saucepan, heat (do not boil) the milk and sugar until completely dissolved. Then add flour and whisk until smooth. Increase the heat and bring the mixture to a boil. Cook, stirring, for about three minutes until thickened.

Remove from heat, add coconut and vanilla, mix thoroughly.

We scoop up one future macaron with a tablespoon, a light cookie with the taste of everyone’s favorite “Raffaello”, the homemade recipe for which can be found here, and place it on a baking sheet with parchment - or squeeze it out beautifully using a pattisserie bag.

Bake for 15-20 minutes until golden. Let it cool and serve on our lean, tasty, fashionable New Year's table!

Salmon roll

What do you need:

  • Salmon fillet – 400 grams

For filling:

  • Canned green peas – 150 grams
  • Carrots - 1 pc.
  • Agar-agar – 1 teaspoon
  • Yeast-free lean bread – 150 grams
  • Greens, salt, pepper to taste

How to cook:

  1. Boil the carrots, finely chop the greens.
  2. Soak the lean bread in water and add the swollen agar-agar. Add green peas, carrots and herbs to the bread mixture. Mix everything.
  3. Cut the salmon fillet into thin slices.
  4. Spread the vegetable mixture onto the fillet and form into a roll.
  5. Wrap the roll in foil and bake in the oven at 180 degrees. Cooking time: 40 minutes.

Cut the finished roll into slices, the New Year's Lenten dish is ready.

Lenten dish for the New Year “Jellied vegetables”

What do you need:

  • Canned green peas – 300 grams
  • Carrots – 300 grams
  • Green beans – 100 grams
  • Agar-agar – 50 grams
  • Spices pepper, salt, lemon juice.

How to cook:

  1. Boil the carrots. Drain excess liquid from canned peas.
  2. Dilute agar-agar in water according to instructions and add to vegetable broth. Add salt, pepper and a little lemon juice here.
  3. Place finely chopped vegetables in a portion form and pour prepared agar-agar over them.
  4. Afterwards you need to put the aspic in the refrigerator until it hardens completely.

New Year's appetizer "Stuffed champignons"

What do you need:

  • Large champignons – 10 pieces
  • Onions – 2 pieces
  • Rice - 100 g
  • Pepper, salt

How to cook:

  1. Separate the stems from the caps of the mushrooms. Finely chop the onion and champignon legs, fry in oil with pepper, salt and herbs. Boil rice and mix with fried onions.
  2. Place the resulting filling into the caps and place in the oven.
  3. Bake for 15 minutes at 180 degrees.

Lenten recipes for the New Year's table from fish

During the Nativity Fast it is allowed to eat fish. Therefore, any will be appropriate on the New Year's table. These can be main fish dishes or New Year's Lenten snacks with fish. Check out new recipes for Lenten fish dishes.

Stuffed baked carp

Stuffed carp without bones is considered ideal, for which the fish is gutted and the skin is carefully removed. But doing this without skills is problematic. Therefore, we offer a simplified version of stuffed carp.

However, this dish also has perfect taste and is not too inferior to the first ideal option. On the New Year's table, stuffed carp will be a wonderful decoration and treat.

We will need:

  • large carp – 1 piece;
  • onion – 2 heads;
  • champignons – 0.5 kg;
  • salt;
  • ground black pepper - to taste;

We clean the carp from the husks and intestines, gills, and protect it from dark films.

Peel the onion, cut into half rings, cut the mushrooms into slices. Fry the onions and mushrooms until half cooked, without frying.

You can use not only onions and mushrooms as a filling. Buckwheat porridge, any vegetables, and boiled potatoes will do.

We place the filling in the belly of the fish, which is then sewn up. Grease the fish with vegetable oil and place the dish in the oven.

The carp will be baked for 40-60 minutes, while the oven temperature is maintained at 180 degrees. You will have to determine the exact baking time yourself, depending on the capabilities of the oven and the size of the fish.

When a golden brown crust appears on the carcass, the fish can be taken out and served hot on the New Year's table. Decorate the carp with lemon slices and dill sprigs. As a side dish for baked carp, you can prepare boiled or baked potatoes.

Fish Hye in Korean

You can prepare Lenten New Year's Heh from fish using different recipes. We offer an option with vegetables and spices.

Pike perch prepared according to this Lenten recipe turns out simply magnificent. You'll have to tinker a little, but the result will delight you with its novelty and unusual taste.

We will need:

  • pike perch carcass – 1 piece;
  • carrots – 2 pcs.;
  • cucumber – 2 pcs.;
  • onions – 4 pcs.;
  • coriander - to taste;
  • ground red pepper – 1 tbsp. l.;
  • acetic acid (70%) – 1 tbsp. l.
  • garlic – 5 cloves;
  • bell pepper (red) – 0.5 pcs.
  • soy sauce - to taste.

Preparing the fish. You can simply peel and cut into small pieces.

It would be better to prepare the fillet by removing all the bones. And only after that cut the fillet into pieces.

Salt and pepper the fish and fill it with vinegar essence. Knead the workpiece thoroughly, you can even lightly mash the fish with your hands. We send the fish preparation for at least 6 hours so that it marinates.

At the same time, you need to work on the onion. We clean it and cut it into half rings. Sprinkle the prepared onion with lemon juice and also place in the cold.

Now let's do the vegetables. On a Korean slicing grater, grate three carrots and cucumbers. Cut the bell pepper into cubes. Place all the vegetables in one bowl and season with oil. Add sugar, salt, coriander and hot pepper there. The vegetables will also marinate for about 6 hours.

After 6 hours, you can begin the final stage of cooking He from fish. Remove the fish from the marinade, rinse and pat dry with paper towels.

Add pickled onions to the fish, sprinkle the dish with pepper, add a little coriander and chopped garlic. Heat the sunflower oil in a frying pan and, already in a boiling state, pour it onto the prepared fish. Don't forget to mix the fish with spices and oil.

All that remains is to add all the vegetables to the dish. Mix all the ingredients and you can serve the appetizer to the table. Fish Heh keeps well in the cold, so this appetizer can be prepared in advance.

Fish appetizer for the Lenten table

What do you need:

  • Rice
  • Pollock fillet
  • Salt and pepper

How to cook:

Boil the rice. Make minced meat from the fillet. Mix rice and minced meat, adding pepper, salt and herbs. Form the resulting mixture into small balls. Fry in a frying pan with oil.

The main thing on the New Year's table are desserts, which are served last.

Puree soup is the original New Year's Lenten first course for the festive table.

Ingredients:

  • 150 grams of tomatoes

  • 5 grams of basil

Recipe for a Lenten dish for the New Year: tomato puree soup

  1. Fry chopped onions, garlic, celery and carrots in a well-heated frying pan.
  2. Peel the tomatoes, cut them and add them to the vegetables. Add rice to the pan and cook until done.
