It is important to choose good and tasty pears; they should not be overripe or damaged. They can be cut into cubes or small slices, straight with the peel. Place them in a saucepan or basin and add 1.5 kg of sugar, then cover and leave for two hours.
Remove the zest from the lemon, then remove the white peel and cut the fruit into slices, removing the seeds. Place in a bowl, add the remaining sugar and leave for 2-3 hours. Then put on fire, pour in 200 ml of water and bring to a boil, and then maintain the boil for 10 minutes. Pour everything hot into a bowl or pan with pears and leave for another 4-5 hours, possibly until the morning.
Now it’s time to put the entire mixture on the fire, bring to a boil and leave to simmer for 10–12 minutes, stirring gently. Then pause again for 4–5 hours. Ideally, carry out 4 cookings according to this scheme, then the jam will be rich and preserved perfectly. During the third cooking, add a stick or ground cinnamon.
You can only put it in sterilized jars, and the jam should be hot, only from the pan.
