Buckwheat: does it have any contraindications?

Buckwheat is a purely Russian culture. Southern Siberia and Altai are considered the birthplace of buckwheat, where it was grown back in the 1st century BC. Buckwheat rightfully belongs to medicinal products.

Doctors value it for its large amount of rutin - a substance that strengthens the walls of blood vessels, stops bleeding and has a healing effect on the veins.

Rutin is also useful for various diseases and arthritis. It is believed that buckwheat has a beneficial effect on the immune system and helps eliminate excess cholesterol, toxins and heavy metal ions from the body. Buckwheat lovers are not at risk of senile sclerosis and heart problems.

This cereal is recommended for patients with anemia, diabetes, obesity, as well as for nervous disorders and liver problems. Buckwheat contains approximately 5 times more trace elements (iron, phosphorus, copper, potassium, calcium, magnesium, zinc, boron, iodine, cobalt and nickel) than other cereals. It also contains vitamins: A, E, C, K, B, B2, PP, as well as other essential nutrients. In terms of the content of essential amino acids, buckwheat is close to products of animal origin and, according to experts, can serve as an equivalent substitute for meat. It contains about 1.2% fat, and is characterized by high resistance to oxidation. Therefore, even with long-term storage, the nutritional quality of cereals does not deteriorate. And finally, buckwheat is classified as an environmentally friendly product, as it is a very strong plant and does not require either fertilizers or chemical treatment to protect against pests. It is not subjected to genetic modification.

Features of steamed buckwheat

Buckwheat can be boiled, seasoned with butter or milk, fried and steamed with boiling water. The last method is the most economical, because you do not need to waste extra energy resources, as when cooking and frying. Plus, it's the most useful.

Did you know? Even ancient Chinese doctors believed that eating buckwheat could prolong a person’s life and save entire nations.

Why is cereal steamed?

Buckwheat is useful in any form, but not always to the same extent. Among all the ways to prepare buckwheat for food, soaking or steaming it is the most beneficial for the human body. When steaming, the chemical composition of the product approaches the composition of cereals in their raw form, and most of the minerals, vitamins and other nutrients are preserved.

The benefits of buckwheat
In addition, regular consumption of buckwheat dishes in this form can help get rid of many health problems.

How is it different from boiled

Most people are accustomed to eating this cereal in boiled form. It can be eaten for breakfast, lunch and dinner, either as a side dish or separately. Only recently have many consciously begun to prefer steamed buckwheat. The main difference between a steamed product and a boiled one is the ability to preserve as much as possible the beneficial components that remain in the cereal during steaming.

Important! The process of loss of nutrients during heat treatment of buckwheat begins at a temperature of +40

°
C, after 20 min.
after the start of cooking. Therefore, it is recommended to cook it for 5 minutes, then leave it to steep for an hour. The quantitative composition of proteins, fats, carbohydrates, minerals and vitamins decreases by 4 or more times when the egg is cooked; when steamed, these indicators decrease slightly or remain at the same level. All this makes steamed buckwheat a good assistant for losing weight and fighting many diseases.

Steamed buckwheat
Buckwheat is beneficial both boiled and steamed. But there is still a difference. When boiling, the fiber content decreases by 25–30%; when steaming, it decreases slightly. The same thing happens with almost all the beneficial substances that are part of the cereal. Therefore, we can talk about greater benefits from consuming steamed buckwheat.

Is it possible to eat raw

Eating raw kernels has a positive effect on the body. It has a high level of nutrients. The carbohydrates of this cereal in this form are absorbed very slowly, due to which the feeling of fullness is maintained for a long time.

  • This cereal is recommended in the following cases:
  • if you are overweight;
  • for problems with the gastrointestinal tract, kidneys, liver;
  • to lower cholesterol;
  • to increase hemoglobin;
  • to improve the immune system;
  • with edema;
  • with atherosclerosis.

But if buckwheat is consumed raw and not even steamed, then over time, instead of benefit, you can get health problems.

Important! Buckwheat does not contain glucose, so it should not be consumed for a long time.
Nutrition should be balanced. In the absence of negative manifestations, it is better to eat dishes from it at regular intervals, combining it with other healthy foods.

Door to Europe

German Chicoyan History

Nowadays, the theme “Ours are there, but that’s what they need” is very popular among Transbaikal residents. It’s interesting to find out why and how fellow countrymen decide to leave their native land. Our relatives, acquaintances, and friends could easily be among them. My classmate Tanya, with whom I sat at the same desk for several years, has been living in Germany for the fifth year.

Nanny from Transbaikalia

After graduating from the German-English department of the Faculty of Foreign Languages of our then ZabSPU, Tanya decided to undergo language practice in Germany. After completing a bunch of all the necessary documents, she went to the glorious city of Frankfurt am Main, officially to work as a nanny. Usually in such cases the hired nanny lives in the host family's apartment. However, in the six-room apartment of the German family, with whose three children Tanya had to take care of, there was no place for her. And the Germans rented a separate apartment nearby for her. From that moment on, the girl from a remote village in the Krasnochikoysky district began to meet a civilized European country. The head of the family is a banker, which is natural, since Frankfurt am Main is the largest financial center of continental Europe. His wife is a school teacher. And three children who quickly got used to Tanya. After some time, she made friends from different countries, and it became possible to travel around Europe. A year later, after the contract expired, Tanya was supposed to return to Transbaikalia. But, as they say, we assume... The German family got so used to the Russian girl that they kept her for another year, and then even issued a guarantee for her. In simple terms, they are responsible for Tanya to their government and will have to answer for her if our girl decides, say, to steal a car. Well, it's a joke, of course. Tanya is very law-abiding. Today she no longer works as a nanny. However, he communicates very closely with his family and often goes on vacation with them. And in the meantime, he is receiving a second higher education at the School of Finance and Management, and also works as an organizer of various kinds of exhibitions. The salary is small by European standards - 800 euros (just over 30 thousand rubles). This amount is written down to the penny: 300 euros for renting an apartment, 100 for food, and so on.

How do they live?

We haven't seen each other for many years. Tanya came to Russia only twice during this time; she was not able to see each other the first time. Before the meeting, we were both worried. She came the same as always. She has not changed in appearance, except that she has become prettier. But the European manner of speech is clearly visible, a kind of concentrated slowness. But it turned out that she had forgotten Russian words. “When I was flying on an airplane, when addressing my seatmates, I first formulated a thought in German, and then I realized that I was already in Russia and I needed to remember my native speech - such a funny situation,” Tanya shared her impressions. Our conversation was more like an interrogation on my part. How interesting everything is! For example, who these same Germans are, even if they are residents of a single city. “They,” says Tanya, “don’t waste a single minute. They have everything planned out. At first it annoyed me. There wasn’t enough Russian carelessness, or something.” However, over time, I myself understood why this was so - otherwise there would not be enough time for anything. In Frankfurt am Main, without a hint of guile, we can say that every second person is a banker. And one who rides a bicycle to work. “Where in our country can you see this?” - my friend is surprised. There, in distant “Germany”, there is now just a craze for a healthy lifestyle. That’s why the prices for visiting various gyms and sports clubs are very, very reasonable, even by the standards of Chita. So, for example, Tanya herself buys a fitness subscription for 20 euros - a little more than 800 rubles. “Where in our country can you see this?” - Now it’s time for me to be surprised. And my idea of a healthy lifestyle doesn’t fit in with the famous German sausages. According to Tanya's stories, the Germans really eat very strangely. In the morning, for example, eat toast with chocolate spread, washed down with apple juice or mineral water. They mostly dine in restaurants and cafes during breaks at work. They dine again on sandwiches with cheese and sausage, washed down with water, or (wherever without this), good local beer. By the way, the Germans still add variety to the evening menu - for this case, each refrigerator has two special compartments in which 8-10 types of sausage and cheese are stored. This is what a “healthy” diet is. It is not surprising that by the time it is time to get married, German girls have gained a certain amount of extra pounds. “I had a lot of fans when I arrived in Germany, and even now,” Tanya smiles. After all, young German women, besides everything else, don’t particularly like to take care of themselves, and dress according to the principle of “what came out of the closet first.” Don't think that they are all such slobs. It’s just that Germans, like many residents of other countries, prefer comfort when it comes to clothing. Therefore, to see a German woman in high heels clumsily weaving along the sidewalk in broad daylight is a rather unrealistic picture. The Germans themselves say (and this is a shame) that if a girl walks around in high-heeled shoes, then she is either Russian or a lady of easy virtue. Let's not talk about stereotypes, though. Let's get back to German women who are starting to think about dieting when their husbands turn their heads at slimmer women. Then they pull themselves together and... yes, yes, from one extreme to another. They bring themselves to the state of “skin and bones”. Oh, women, we are the same in all countries. Tanya herself never fell in love with German cuisine. She prepares traditional Russian dishes for herself, buying products in special “Russian” stores, which are supposedly imported from Russia.

German Ordnung

The city of Frankfurt am Main, where our fellow countrywoman lives, is very comfortable. There is no question of where to go to relax. All kinds of discos, museums, galleries, exhibitions are simply a paradise for an inquisitive person. You can just sit in the park with friends and drink a bottle or two of beer. Tanya was very surprised when she learned that our country has a ban on drinking alcohol in public places. “It’s just,” she says, “Germany has a drinking culture. No one here will go rowdy and shout obscenities at the whole street.” And there is practically no crime in the city. “I can safely walk alone at three o’clock in the morning without worrying about my own safety, and there will definitely be a police patrol along the way every 15 minutes.” You know, we can talk about our meeting with Tanya for a long time. For example, about the fact that rabbits walk peacefully on the streets of the city, and for causing harm to them, the violator faces a huge fine. The fact that Germans take the issue of starting a family very seriously, and get married only when they are firmly confident in the stability of their financial situation. About everything, about everything! And therefore, forgive me, dear readers, for some confusion in the presentation. ... Tanya did not dare to come to Russia for a long time. She had a difficult decision to make. Should I stay in Germany, or maybe return to my homeland? Because she understands that she will never belong THERE, but even HERE she is already a stranger. And she made a decision - she flew away to a distant country. Some will consider her an upstart, others will rejoice. I will certainly be among the latter. I’ll wish good luck to my dear friend, I’ll envy her in some ways, maybe... And I’ll look forward to the next meeting.
