Delicious marinade for chicken legs

This marinade requires some attention and time as the ingredients don't just mix together. To properly marinate the legs, we will first boil the marinade, then cool and only then immerse the legs in it. The recipe is suitable for a planned barbecue. But as a result, you will get very tasty fried legs with a subtle aroma of spices and very tender meat. Please note that this brine is made without vinegar.

What do we need for the marinade?

  • coarse salt - 1/4 cup*;
  • sugar - 1 tbsp;
  • lemon - 1 piece;
  • bay leaf - 3 pcs.;
  • garlic - 8 cloves;
  • dried thyme - 1 tsp;
  • black peppercorns - 1 tsp;
  • ground hot red pepper - 0.5 tsp;
  • water - 1.5 liters;
  • chicken legs (legs, thighs or drumsticks) - 3 kg;
  • butter - 100 g;
  • fresh herbs - 1 bunch.

* glass - 200 ml volume.

How to marinate chicken legs for barbecue

  1. Pour water into the pan. Squeeze lemon juice into it. Cut the garlic cloves into thin slices. We put all the ingredients into the water, except butter and herbs.

  2. Place on the fire, bring to a boil, cook for 5 minutes and turn off. Let cool.
  3. You need to soak the legs. It is better to make cuts on the chicken legs, then the marinade will penetrate well inside. Make a cut with a sharp knife. We only cut the skin, as shown in the photo below.

  4. Place the legs in a container large enough to hold all the marinade. Fill it up. The legs should be completely covered with liquid.

  5. Marinating time is at least 3 hours, overnight is possible.
  6. Before you start grilling the kebab, melt the butter. We tie a bunch of greens (it can be parsley, dill, rosemary) with threads for ease of use. And we will use it like a brush - periodically lubricate the surface of the legs with oil.

  7. Fry until a golden brown crust forms, and when you pierce the leg with a knife blade to the bone, red juice comes out.

  • 40-80 ml dry white wine;
