- Beat the eggs until white with sugar, salt and vanilla.
Tip: To beat the eggs better, they must first be cooled, for example, by placing them in the refrigerator.
- Wash the zucchini, peel the skin and grate on a coarse grater. Lightly squeeze out the released juice.
Tip: It is better to use the vegetable when it is young. You don’t have to cut off the very thin skin, but the core with the seeds must be removed in any case - you don’t want them to spoil the delicate structure of the cake. You can use a blender rather than a grater, but in this case you will have to use a little more flour than the recipe recommends.
- Combine beaten eggs, grated zucchini and vegetable oil. Gently but thoroughly mix the ingredients.
- Add baking powder to the flour and, stirring constantly, pour the mixture into the liquid mass. Mix the ingredients thoroughly until smooth. The thickness of the dough should resemble sour cream. If desired, you can add cocoa powder and then we will have a chocolate cupcake
Tip: Don't forget to sift the flour through a sieve, because oxygenating it makes the muffins more airy.
- Divide the finished dough into the molds, filling them about ⅔ full, and place it in the preheated oven.
Tip: The molds must be greased in advance and sprinkled with semolina or breadcrumbs. Bake cupcakes in small tins at 200 degrees for 30-35 minutes , in large tins - 50-60 minutes .
- A healthy muffin with zucchini, made from dough without using fatty sour cream in the recipe, is ready. If desired, the baked goods can be sprinkled with powdered sugar.
