Ingredients:

  1. Seven oranges.
  2. Ginger root – 10 g.
  3. Lemon juice – 80 ml.

For the syrup:

  1. Sugar – 420 g.
  2. Water – 420 ml.

Before cooking, wash the oranges thoroughly and pour boiling water over them. Now we cut each one into four parts, and then cut each part in half. Remove the orange pulp with a spoon and cut the peel again.

If you come across thin-skinned fruits, you can try to roll each strip into a roll. Next, the blanks are placed in a container and filled with water so that it covers the crusts. Leave the peel in this form for three days. It is necessary to change the water in the pan every day (at least five times a day). This is done in order to remove unnecessary bitterness.

Thick-skinned oranges will require more work. First soak the crusts. And then remove the white pulp from the inside with a thin knife. Only after this can the blanks be rolled into spirals.

After the soaking process, the zest spirals are boiled at least four times, each boiling lasting twenty minutes. Each time the crusts need to be doused with cold water.

Orange peel jam

You will need:

  • 5–6 oranges
  • 75 ml lemon juice
  • 10 g ginger root

For the syrup:

  • 400 ml water
  • 400 g sugar

Preparation:

  1. Wash the oranges, pour boiling water over them and cut them lengthwise into 4 pieces. Then cut each part in half again. Remove the pulp and cut the peel of each slice in half again.
  2. If the orange peel is thin, roll each strip into a tight roll and thread it onto a thread like beads. Place the “beads” in a deep bowl and add water so that it completely covers the peel. Leave for 3 days, changing the water regularly (about 4-5 times a day) so that the bitterness goes away. If the oranges have a thick peel, you should first soak it, then remove the white part from the inside of the peel from each strip with a knife, and only then roll the strips into spirals.
  3. After soaking the zest spirals, boil them 3-4 times for 15-20 minutes, draining the water each time. After each boiling, rinse the beads with cold water.
  4. In a wide saucepan, boil syrup from water and sugar, dip the prepared “beads” into it, bring to a boil and cook over low heat for 20–30 minutes. Let cool.
  5. Add finely chopped ginger root to the zest in the pan, bring everything together to a boil, pour in lemon juice and cook for 20–30 minutes. Then remove the jam from the heat and cool.
  6. Remove the “beads” from the jam and remove the threads. Pour the jam into a clean, dry jar, close the lid and store in the refrigerator.
