What to cook from expired curd mass. What can you make from old cottage cheese?

Many housewives like to buy food in reserve, especially if the holidays are approaching. When the refrigerator gradually begins to empty, a pack or other cottage cheese that has expired is discovered in a secluded corner. And here the question arises: is it possible to eat expired cottage cheese or is it better to abandon such a risky step? And if there is no talk of feeding children with such cottage cheese, adults sometimes eat such a product without worrying at all that there may be poisoning.

What disorders can an expired product cause?

It's no secret that pathogenic microorganisms multiply well in all dairy products

. Moreover, it does not matter at all at what temperature the product was stored. Of course, at room temperature, curd products disappear quickly, regardless of the expiration date, but even in the cold, during prolonged storage, it also tends to deteriorate.

If a person takes the risk of consuming expired cottage cheese, he may experience the following health problems:

  • rotavirus infection;
  • salmonellosis - if the product was initially of poor quality;
  • dysentery;
  • indigestion.

If you eat expired cottage cheese, the least that can happen is uncontrollable vomiting and severe diarrhea. But this is not so small, considering that a day, and sometimes several days, will be lost, and the person will not actually leave the toilet.

It should be borne in mind that cottage cheese that was placed in the freezer immediately after purchase can be considered good even after the expiration date, since at low temperatures the growth of microbes is stopped. But for safety reasons, it is advisable to heat-treat such a product before use.

What to do with delays

If the housewife finds an expired item in the refrigerator, then a logical question immediately arises: what to do with it? It’s worth saying right away that a good housewife is unlikely to throw away even such a product

, because there are many recipes for which expired cottage cheese is perfect. With expired cottage cheese of varying fat content, it is quite possible to make such delicious dishes that both adults and children will like:

  • syrniki;
  • cupcakes;
  • cottage cheese casserole;
  • lazy dumplings;
  • dumplings with cottage cheese;
  • donuts;
  • cheesecakes.

After heat treatment, expired cottage cheese can be eaten

, but only if the expiration date has recently expired. If fermented milk products are already about a month old, then they definitely cannot be eaten, even after baking or boiling.

To ensure that the cottage cheese warms up as much as possible when frying the cheesecakes, the pan must be covered with a lid.

How to store cottage cheese so that it does not spoil

You need to choose store-bought cottage cheese carefully, paying attention to the expiration date. The rules for storing cottage cheese are quite simple:

  • place it on the coldest shelf of the refrigerator;
  • store in an airtight glass or porcelain container with a tight lid in which you can put several pieces of refined sugar.

In the freezer, the shelf life of cottage cheese is from 4 to 12 months at temperatures from minus 18 to 30 degrees. Re-freezing is prohibited. This product defrosts in the refrigerator for 10-12 hours, then it can be eaten. For pastries, you can defrost in a warm place for 3-5 hours. Our grandmothers stored homemade cottage cheese by wrapping it in a clean cotton or linen cloth, dampening it and placing it in a covered bowl and keeping it cool. You should not store cottage cheese in the refrigerator if it has been sitting for more than two days; prepare a tasty and healthy dish from it or freeze it.

When should you not eat expired cottage cheese?

You can cook something out of date only if the product has not changed its color or sour milk smell.

. Cottage cheese or sweet curd mass cannot be used even for cooking if:

  • the color of the product has changed;
  • the curd has become sticky to the touch;
  • spots with mold were found on the curd mass
    ;
  • the smell ceased to be sour milk and a slight aroma of mold appeared.

If a young child eats expired cottage cheese, he may have a severe form of poisoning.

What bacteria cause poisoning?

Poisoning occurs due to pathogenic microorganisms, which are found in abundance in expired products. The severity of intoxication usually depends on the type of microbe

. Most often, poisoning with fermented milk products is caused by the following types of pathogens:

  • staphylococcus - this bacillus can get into the cottage cheese during the cooking stage. A feature of this disease is muscle weakness at normal temperatures;
  • Shigella is the name of the causative agent of dysentery. This pathogen can get into cottage cheese if it is made from low-quality raw materials. With this type of poisoning, flatulence, low blood pressure and severe diarrhea are observed;
  • salmonella – gets into products if the preparation technology is violated. This microbe does not affect the taste of the final product at all
    . The first signs of poisoning are noticeable within a few hours after eating contaminated foods. The main symptoms are high fever and vomiting.

If cottage cheese and curd mass have not been in the refrigerator for long, they can be used to prepare curd dishes. Otherwise, it’s better not to risk it and throw the fermented milk product in the trash.

This question is of interest to many housewives who sometimes forgot to put cottage cheese in the refrigerator. Who hasn't this happened to? You get it, but the expiration date has expired. And they start thinking, what should I do with it: throw it away or make cheesecakes?

What are the benefits of cottage cheese, how can you tell if the cottage cheese is spoiled? Is it possible to use stale cottage cheese? Cheesecake recipes. Recommendations for preparation.

Everyone knows that cottage cheese is a very healthy fermented milk product containing a lot of microelements, amino acids and vitamins. It also contains fats, calcium and lactose. These nutrients make it a very important food in the human diet.

But, unfortunately, this product is perishable. You can store it in the refrigerator for only two days. Cottage cheese contains protein, which is very easily absorbed by the body. Very useful for everyone, especially weakened and sick children.

Of course, the healthiest thing is homemade cottage cheese. The content of a large amount of casein protein makes it an important product in diets. Due to its low acidity, it is used in diets for gastritis, gastric and duodenal ulcers.

Types of fat content of cottage cheese: 3%, 9%, 19%. Below 3% is low-fat cottage cheese. Nutritionists say that when it comes to dietary nutrition, the best one is made from skim milk.

Since the higher the fat content, the harder calcium is absorbed by the body. In terms of taste, it is certainly inferior to other types of cottage cheese. The most popular among buyers is cottage cheese with medium fat content.

Flavored flatbreads stuffed with cottage cheese and dill

If you have expired cottage cheese, do not rush to throw it away. Better make fragrant flatbreads filled with this fermented milk product with dill. It will turn out just amazing!

Cooking time – 40 minutes.

Number of servings – 4.

Ingredients

To make original fragrant cakes, you need:

  • egg – 4 pcs.;
  • water – 250 ml;
  • butter – 100 g;
  • flour – ½ kg;
  • dill – 1 bunch;
  • salt – 1 tsp;
  • cottage cheese – 600 g.

Cooking method

Making original flatbreads filled with expired cottage cheese and dill is as easy as shelling pears.

  • First, prepare all the necessary ingredients.
  1. Flour is sifted onto the table. A dimple is made on top. 3 eggs are introduced into it.
  1. Salt is sprinkled on top. Everything is stirred with a fork. In this case, the mass is diluted with water.

  1. The dough is kneaded by hand and rolled into a ball, wrapped in film. He needs to “rest.”

  1. Meanwhile, the dill is washed, dried, and finely chopped. Knead the cottage cheese in a bowl with a fork.

  1. Cottage cheese and dill are mixed. An egg is beaten into them. The mixture must be salted and stirred.

  1. The resulting dough is divided into 4 fragments. A lump rolls out of each one. The pieces are rolled out one by one into a circle. Melt the butter in the microwave or in a water bath. The resulting mixture is brushed onto the dough using a pastry brush.

  1. The flatbreads are folded in half. From above you need to walk over them with a rolling pin.

  1. The workpieces are once again greased with melted butter. They curl up again. Once again (now triangles) you need to go through the rolling pin.

  1. Once again, the dough is greased with oil and rolled into a ball.

  1. The ball must be rolled out into a circle. The dough is pulled out from the center. The curd filling is placed in the middle.

  1. The blank is closed in the form of an envelope.

  1. The corners are pulled out and climbed into the center. They need to be pinched.

All that remains is to fry the flatbreads stuffed with dill and expired cottage cheese in a frying pan.

How to determine if cottage cheese is spoiled?

As mentioned earlier, cottage cheese is a perishable product. It is necessary to monitor its timing and be able to identify signs of a spoiled product:

  1. Low-fat, fresh white cottage cheese. Cottage cheese with high fat content is cream-colored. If you notice that the product has begun to develop a rich yellowish tint, this is the first sign that it has begun to deteriorate. If stains and a green tint appear on it, it should be thrown into the trash bin immediately.
  2. If you notice that the product has become uneven in consistency (dried in places, wet in others, mucus has appeared somewhere). It cannot be eaten fresh. This may occur due to improper storage.
  3. You need to be careful when buying homemade cottage cheese. Inspect it carefully and it is advisable to determine the smell, since there is no manufacturing date or expiration date on it. Fresh cottage cheese with the smell of fresh milk, with a slight sour taste. An expired product has a strong sour smell and tastes bitter.
  4. It’s easier, of course, to buy in a store where the sales dates are indicated. But he doesn't seem so useful. Here, too, you need to be careful and look to see if the dates have been interrupted.

This product is not recommended to be stored for more than three days. It is advisable to place it in the refrigerator in a glass jar with a tight lid. Thanks to this storage, the lactic acid bacteria contained in the cottage cheese do not multiply so actively.

If they talk about stale cottage cheese, they mean cottage cheese that is several days past its expiration date and was stored in the refrigerator. It happens that the cottage cheese is fresh, but its taste is sour. This happens because milk sours faster, especially in summer. There is nothing scary or harmful in this.

Cottage cheese that is not yet completely sour, but no longer fresh, cannot be consumed raw. But, if you process it correctly, it is possible. It can be double heat treated. First, a frying pan, and then an oven. It makes wonderful casseroles and, of course, everyone’s favorite cheesecakes.

  1. Combine flour and soda. Grind the cottage cheese with egg, vanilla and regular sugar. Mix both types of preparations. Knead the dough. It should turn out soft.

On a note! If the cottage cheese is too wet or the egg is very large, then you need to add a little more flour than indicated in the recipe.

  1. Pinch off small pieces from the resulting dough and roll them into lumps from which you need to form flagella. The optimal length of one workpiece is 7 cm.
  1. Vegetable oil is poured into the frying pan and heated; it is better to use a refined product. The blanks are laid out on the bottom. They need to be fried until an appetizing golden brown crust forms. The curd sticks must be turned over and fried until cooked. To remove excess oil, the finished “sausages” should be placed on paper napkins.
  1. While the sticks are still hot, sprinkle them with sugar and roll them thoroughly on all sides.

Fried curd sticks are served when they have cooled down a little.

Do you want to know what delicious things can be made from sour cottage cheese so that not only adults, but also children will like it, then this recipe is ideal for this.

Prepare the following products: 600 g of cottage cheese, 5 eggs, 8 tbsp. spoons of sugar, 0.5 teaspoons of slaked soda with vinegar, 3.5 tbsp. flour, vanillin and vegetable oil.

We will prepare it like this:

  1. The main ingredient of the dish must be ground to make the mass homogeneous. Add soda mixed with vinegar and sugar to it. Mix everything well and add eggs and vanilla to the mixture, and then, adding flour in portions, knead into a homogeneous dough;
  2. Take a cauldron with a thick bottom and pour enough oil into it so that the donuts can move freely there. If you have a deep fryer, then of course use it. Heat it thoroughly and only then start frying. Tear off a piece of dough and form a ball, the size of which should be the size of a walnut. Please note that during frying they will almost double in size. Cook in small batches. By the way, the taste of sour cottage cheese completely disappears during cooking. It is recommended to place the donuts on paper towels so that they absorb excess fat.

We have presented you with the most common recipes that allow you to prepare a delicious dish from sour cottage cheese that will delight both adults and children.

Donuts

Donuts are loved by both adults and children. These airy, deep-fried “balls” are the perfect complement to tea drinking. It is important that they are prepared from available products, and the recipe allows you to recycle unusable cottage cheese. So, to make donuts from spoiled cottage cheese you will need:

  • 2 cottage cheese briquettes;
  • 4 eggs;
  • 7-10 tablespoons of sugar (focus on the acidity of the cottage cheese and your own taste preferences);
  • 3-4 cups flour;
  • vanillin;
  • 2-3 tablespoons butter;
  • half a teaspoon of baking powder;
  • half a teaspoon of baking soda.

Combine cottage cheese with soda and grind. Add sugar, eggs and softened butter with vanilla. Mix everything, then add flour in small portions. Stir the dough after each addition of flour.

The result should be an elastic dough that does not stick to your hands. Heat vegetable oil in a deep fryer or saucepan (there should be enough of it so that the donuts float freely in it without touching the bottom of the dish). Pieces are broken off from the dough, formed into balls and baked in oil.

Dry the donuts removed from the fryer a little with a paper towel. Serve by sprinkling the dish with powdered sugar.

An important point - all the recipes above imply the use of slightly sour cottage cheese. Frozen expired cottage cheese will also work. But if the “sour milk” has changed color and smell, has become too watery or has become moldy, then it cannot be used even after heat treatment. This is due to the high content of pathogenic bacteria in it. If they enter the body, they will at least cause severe vomiting and diarrhea, in the worst case - rotavirus infections, salmonellosis, and dysentery.

Small tricks will allow you to prepare delicious dishes from stale cottage cheese.

  • If the dough turns out to be too crumbly, it is recommended to keep it in the refrigerator for half an hour before cutting. This will help make it elastic.
  • Even if the recipe does not require it, you can add a pinch of salt to baked goods made from spoiled cottage cheese. Firstly, it will make the dish more tender, and secondly, the salt will emphasize the sweetness of the cookies or cheesecakes.
  • The amount of flour should be adjusted based on the consistency of the dough. If the cottage cheese is too liquid, then more flour will be needed. It's best to add it in small batches.
  • Adding citrus zest, vanillin or cinnamon to the dough will help give baked goods a pleasant aroma.
  • The addition of soda allows you to neutralize the acid of sour cottage cheese. And to make the baked goods even more tender, you should take 2 times more soda than the recipe requires. Add the first part to the cottage cheese, quench the second with vinegar or citric acid and add to the dough.
